Cheesy Southern Corn Casserole image

Always looking for another way to serve corn, this is spicy and cheesy!! Prep time includes roasting the peppers under a low broiler.

Number Of Ingredients 7

6 ears of corn
1/2 c roasted/chopped anaheim pepper
1/2 c roasted/chopped red bell pepper
1/4 c salsa verde
2 c white melting cheese, grated
1 tsp mccormicks bacon & chives, opt
salt & pepper to taste

Steps:

  • 1. Remove corn from cob, mix with roasted, chopped peppers, salsa and seasonings and mix together well. Add cheese and mix to combine. Suggestions for cheese would be Monterey Jack or Asadero.
  • 2. Bake 350º for 25-30 min.
