CAULIFLOWER WITH AVOCADO-CILANTRO DIP image

Number Of Ingredients 8

1 2-pound head cauliflower, cut into 1 1/2-inch-wide florets
3 tablespoons olive oil
1 teaspoon dried Mexican oregano
1 avocado, peeled, pitted
4 ounces cream cheese, room temperature
1 Serrano chile, stemmed, de-veined, seeded
1/2 cup chopped fresh cilantro
1 tablespoon fresh lime juice

Steps:

  • In a large, steamer filled with boiling water. Steam the cauliflower, until soft and tender, about 6 minutes. Strain liquid and transfer cauliflower to platter. Drizzle with olive oil and sprinkle with oregano. Meanwhile in the bowl of a food processor place avocado, cream cheese, Serrano, cilantro and lime juice and blend until smooth and creamy, about 1 minute. Season to taste with salt and pepper. Transfer to small bowl and serve with cauliflower for dipping.
