Carrot Bread image

This scrumptious and moist Carrot Bread combines fresh grated carrots, shredded apple, chopped pecans, cinnamon, ginger and nutmeg into the best carrot loaf you will ever have. 1 3/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
3 eggs
3/4 c vegetable oil
1 medium apple peeled and grated
2 c grated carrots
1 c light brown sugar packed
1 tsp vanilla extract
3/4 c chopped pecans

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 9×5 inch loaf pan.
  • 2. Whisk together the flour, baking soda, baking powder, salt, ground cinnamon, ground ginger, and ground nutmeg in a medium bowl. In a large bowl stir together the eggs, vegetable oil, grated apple, grated carrots, brown sugar, vanilla extract, and chopped pecans.
  • 3. Stir the flour mixture into the carrot mixture just until combined. Pour into prepared pan.
  • 4. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Do not overbake.
  • 5. Cool the bread in the pan on a wire rack for 5-7 minutes before carefully inverting it on to the wire rack and gently rolling it over. Cool 2-3 hours before slicing.
