1 Pork Shoulder (6 lbs) or more (Boston Butt)
RUB
3 Tbl Black Pepper
3 Tbl Dark Brown Sugar
3 Tbl Paprika
2 Tbl Salt
1 tsp Cayenne Pepper
MOP
1 C Cider Vinegar
1/2 C Water
Tbl Worstechire Sauce
Tbl Salt
2 tsp Vegetable Oil
1/2 tsp Cayenne Pepper

Steps:

  • Cut the Pork into 4 pieces to increase surface area. Apply the rub overnight. Smoke for as long as possible, 5-7 hours keeping temperature about 225 F. Baste every half hour with mop. Meat will turn dark brown almost black. Hickory wood chips soaked in water work well (about 4 bags worth) . Serve with cole slaw, and mop as sauce.
