Steps:
- Cut the Pork into 4 pieces to increase surface area. Apply the rub overnight. Smoke for as long as possible, 5-7 hours keeping temperature about 225 F. Baste every half hour with mop. Meat will turn dark brown almost black. Hickory wood chips soaked in water work well (about 4 bags worth) . Serve with cole slaw, and mop as sauce.
