Caribbean Coconut Rice Pudding image

I like this recipe as you prepare it on the stove top vs. the oven.

Number Of Ingredients 7

1/2 c jasmine rice
2 c whole milk
2 c coconut milk
1/3 c granulated sugar
2 Tbsp raisins
1/2 tsp vanilla extract
1/2 tsp ground cinnamon

Steps:

  • 1. Wash rice. Combine rice, milk and coconut milk in saucepan. Bring to a boil. Lower heat. Cook gently, stirring as needed for 1 hour or until rice is cooked and milk has thickened.
  • 2. Add sugar, vanilla, raisins and cinnamon. Cook for 5 additional minutes.
  • 3. Chill 1 hour before serving.
