Can Do Quick Sweet Dough image

This dough is very easy to make and can be used for anything from cinnamon rolls to kolaches. My mom used to make several batches at a time, just so there would be enough to last a few days. The key is not to overwork the dough!

2 pkg rapid rise yeast
5 1/2 c flour, more or less depending on humidity
1 c sugar
2 tsp baking powder
2 tsp salt
1/2 c warm water
1 1/4 c warm buttermilk
2 eggs, room temperature
1/2 c softened butter

Steps:

  • 1. Mix 2 cups of flour with the remaining dry ingredients in a stand mixer. Using dough hook, start adding liquids, scraping down sides as needed. Slowly add one cup of flour at a time, until you have added a total of 5 cups. The dough will be sticky. Use remaining flour to flour surface of counter. Pour dough out onto floured surface. Use pastery scraper if needed to help knead the dough and incorporate the flour. Add additional bench flour if needed. The dough must remain VERY soft. Only knead for about 3 minutes, just to loose a little stickiness. Allow dough to rest for 10 minutes. After 10 minutes, use the dough for your favorite sweet bread recipe. Cinnamon Rolls, Chocolate Rolls, Kolaches, the sky's the limit. Bake at 350 degrees for 25 minutes, checking after 15 depending on size of treats you make.
