BUTTERMILK-BRINED TURKEY image

1 1/2 cups turkey brine -
4 qt buttermilk -
16-18 lb turkey -
4 tbs butter at rm temp

Steps:

  • in saucepan, bring turkey brine & 1 qt water to boil - simmer med/lo stirring until brine dissolves, 5-10 mins - cool to rm temp - in lg pot combine brine & buttermilk - rinse turkey c cold water - place in lg brining bag - pour in brine - seal bag - place in lg pot - refrigerate 24-36 hrs - remove turkey fr brine - rinse turkey c cold water, pat dry - trim excess fat - place breast side up on rack in lg roasting pan - rub skin c butter - let stand @ rm temp 1 hr - position rack in lower 3rd of oven - preheat to 400 - roast turkey 30 mins - reduce to 325 - continue roasting - baste q 30 mins c pan juices - cover c foil if browning too fast - breast temp should be 165 - about 3 -4 hrs - transfer to carving board - tent c foil - let rest 20-30 mins
