Brown Sugar Glazed Meatloaf image

I received this recipe from a newsletter I subscribe to: "Everyday Cheapskate". It gave four different version of meatloaf. This is the first one I've tried and it is DELICIOUS! My husband raved over it, my picky 3 y.o. even ate it and I made one for a friend who just had a baby and all of her family and in-laws enjoyed it, too! I served it with mashed yams and rolls. Yummy!

1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 lbs lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine crumbs

Steps:

  • Preheat oven to 350°F.
  • Lightly grease a 5x9-inch loaf pan. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  • In a mixing bowl, combine all remaining ingredients thoroughly and shape into a loaf. Place on top of the ketchup mixture. Bake in preheated oven for 1 hour or until juices are clear.
