BODACIOUS BABY BACKS W/ GINGER KISSED BARBECUE SAU image

1 (2 liter) bottle of regular Dr. Pepper
2 tbsp fresh ginger, minced
1 cup freshly squeezed orange juice
1 tbsp freshly ground black pepper
1 tbsp sea salt
2 racks of baby back ribs (about 3 ½ lbs)
Rib rub:
¼ cup smoked paprika
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp chili powder
½ tsp dry mustard
2 tbsp brown sugar
2 tsp sea salt
1 tbsp freshly ground black pepper
Ginger Kissed Barbecue sauce:
4 slices applewood smoked bacon, diced
3 shallots, minced
2 cloves garlic, minced
¼ cup ginger, finely chopped
1 (14oz) bottle catsup
1/3 cup frozen orange juice concentrate
1/3 cup light brown sugar
1/3 cup molasses
¼ cup apple cider vinegar
3 tbsp Worcestershire sauce
2 tbsp Tabasco Sauce
1 tbsp freshly ground black pepper
1 ½ tsp sea salt

Steps:

  • 1. In large stockpot heat Dr. Pepper, ginger, orange juice, pepper and salt. Reduce mixture to syrup like consistency by cooking over low heat, approximately 45 minutes. Let mixture cool and transfer to large Ziploc bag, add ribs to bag. Marinate ribs in syrup in refrigerator over night. 2. Combine rib rub ingredients together in small bowl. Remove ribs from syrup and season with rib rub. Prepare barbecue pit to medium, arrange ribs on barbecue and grill until ribs are tender (about 40 minutes). Turn ribs with tongs during grilling process. Transfer ribs to work surface. 3. While ribs are grilling, make barbecue sauce by cooking bacon in stock pot. When crisped add shallots, garlic and ginger and cook for about 3 minutes. Add remaining ingredients, stir, bring to a boil and reduce heat to simmer. Let simmer for15 minutes. 4. Cut ribs into individual pieces and place on pretreated baking sheet, brush ribs with barbecue sauce and place baking sheet on grill. Grill ribs until brown and crisp on edges, turning and reapplying barbecue sauce during cooking process, about 12 minutes. Serve ribs warm with additional sauce for dipping.
