BLUEBERRY STREUSEL COFFEE CAKE image

Number Of Ingredients 12

2 cup(s) all purpose flour
3/4 cup(s) sugar
2 teaspoon(s) baking powder
1 large egg
1/2 cup(s) milk
1/2 cup(s) butter, softened
1 cup(s) fresh blueberries
1 cup(s) pecans, chopped
STREUSEL TOPPING
1/2 cup(s) sugar
1/3 cup(s) all purpose flour
1/4 cup(s) cold butter

Steps:

  • Preheat oven to 350ยบ
  • In a large bowl, combine flour, sugar, and baking powder. Whisk egg, milk and butter. Stir into dry ingredients.
  • Fold in blueberries and pecans. Spread into a greased 9 inch square baking pan.
  • For topping, combine sugar and flour in a bowl. Cut in butter until crumbly. Sprinkle over batter.
  • Bake 35 - 40 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.
