Blackberry Cobbler image

This style of cobbler is quite similar to a French clafoutis but the batter uses more flour and has baking powder instead of eggs to lift it. Use big juicy blackberries for this recipe and the batter will be marbled with their color.Unknown Source

Number Of Ingredients 11

1 3/4 cup flour
1/4 tsp. mixed spice (optional)
2/3 cup sugar
a large pinch of salt
4 tsp. baking powder
1 cup milk
1/2 tsp. vanilla extract
1/2 stick unsalted butter
1 1/2 lbs. fresh or frozen blackberries
chilled cream or hot custard to serve
a large metal baking pan

Steps:

  • 1. Preheat oven to 350.
  • 2. Sift flour, mixed spice if using, sugar, salt and baking powder into a bowl Gradually whisk in milk and vanilla extract to give a thick batter. Let sit for 15 minutes.
  • 3. Melt butter over gentle heat in shallow metal baking pan. Give rested butter a quick stir, then pour batter into pan over melted butter. Don't worry if the butter floats around the mingles with the batter at this stage.
  • 4. Immediately scatter blackberries over the batter and transfer cobbler to preheated oven. Bake for about 55 minutes, til batter has puffed up and set. Serve warm with cream or custard. Serves 4 to 6
