Steps:
- Cook the one serving of oatmeal and use another large saute pan, with a splash of vegetable oil, to saute 1/2 cup of finely diced red onion, 2 minced cloves of garlic and 1 large, deseeded and finely diced jalapeno pepper. After those have softened up for a couple of minutes, sprinkle in about 1 tsp of ground cumin, stir that in and turn the heat off. Next, use a large mixing bowl to combine 2 well drained 15-ounce cans of black beans with a generous 1/2 cup of dried breadcrumbs, the cooked oatmeal and the diced cooked onions and peppers. Then add 1/4 cup fresh chopped cilantro, if you're using it, and use a potato masher to mash it up. Shape that mixture into 6 equal patties Wipe out the saute pan and add another splash of vegetable oil on medium high heat, and then saute the patties in that until they're crispy on both sides and hot all the way through. You might have to add a little more oil to the pan as they're cooking. Serve them up on individual rolls with the sliced avocado and salsa or try a combination of taco sauce and mayonnaise instead. HINTS: Use a half cup measure to divide the mix into cakes.
