BEET SALAD WITH WATERCRESS DRIZZLE image

Number Of Ingredients 7

4 med. beets with root
1/4 c. walnut pieces
4 c. watercress
3 oz. reduced fat goat cheese
1/2 c. buttermilk
1 1/2 t. white wine vinegar
s&p

Steps:

  • Put beets in steamer basket over boiling water cover and steam 45 minutes. cut off ends and peel by rubbing with paper towel. Cut into large dice or slice. Toast walnut in dry skillet over med high heat 3-5 minutes. Put watercress, goat cheese, butermilk,vinegar and salt in processor. Put beets on serving dish, drizzle with watercress sauce and sprinkle with walnutes.
