BARLEY, BEAN & MUSHROOM SOUP image

Number Of Ingredients 12

2 or 3 soup bones or 1-1/2 lbs short ribs
3 tbs chicken fat
1 onion
3 quarts water
1/2 cup large barley
1/2 cup dried mushrooms
1/2 cup large lina beans
1/2 cup quick cooking rolled oats
Carrots
Celery
Parsley
Salt & pepper

Steps:

  • Place bones, chicken fat & onion in saucepot or kettle. Add water; cover & simmer for about 1-1/2 to 2 hours. Skim as necessary. Soak mushrooms in hot water; drain. Add with remaining ingredients to pot & continue cooking until vegetables are tender (about 30 minutes)
