NEW YEAR PORK ROAST image

This roast has become a tradition in our family for New Years Day dinner. We love it whether it's made in the oven or, the crock pot.

1 pork loin or 2 tenderloins
2 granny smith apples sliced
1 large onion
1 pkg drained, rinsed and dried saurkraut
olive oil
applejack whiskey or apple liquor
salt and pepper
dried sage
garlic powder

Steps:

  • 1. preheat oven to 375 -or- crock pot to high wash rinse and drain kraut on paper towel Season roast with salt, pepper, sage, garlic powder. Set aside
  • 2. In large saute pan, heat oil, saute apples & onions til golden. Add kraut and whiskey-about 1/4 cup.
  • 3. Layer kraut mixture in bottom of roasting pan or crock pot Add roast Cook 4 hours in Crock -or- 45min-1hour in oven. (if kraut looks dry in oven-add chicken stock or beer to moisten)
