Banana Peanut Butter Cookies image

I had a lot of bananas recently, and peanut butter was on sale. So there you go.

Number Of Ingredients 12

3 cup(s) all purpose flour
2 medium over-ripe bananas, sliced
1 cup(s) creamy peanut butter
1/2 cup(s) (1 stick) unsalted butter, room temperature
2 large eggs, room temperature
3/4 cup(s) light brown sugar, packed
3/4 cup(s) sugar
1 tablespoon(s) pure vanilla extract
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
- dark chocolate chips, for garnish
- sea salt, for garnish

Steps:

  • Preheat oven to 350'F Set aside two clean cookie sheets.
  • In a medium mixing bowl, cream bananas,butter, peanut butter and sugar together until fluffy.
  • Beat in eggs into the banana/sugar mixture, one egg at a time, until both eggs are completely incorporated. Beat in vanilla.
  • In a separate mixing bowl, mix flour, salt and baking powder together with a fork.
  • Gradually mix flour mixture into the banana/sugar mixture. Mix until completely incorporated, but do not over mix.
  • Roll the dough into 1-inch balls and set onto ungreased cookie sheets. Sprinkle the balls with course seasalt lightly before putting into oven. Bake for 8-15 minutes, or until just golden. Remove cookies from oven. Press chocolate chips into cookies while they are still hot and soft. Cookies will harden as they cool. Cool for at least 10 minutes before attempting to remove hot cookies from cookie sheets.
