Balsamic Grilled Chicken Salad image

Found this recipe in a American Profile insert in our newspaper. It was a big hit at a party my sister had. I'm not generally a fan of mayonaise based salads but, this has to be my new favorite. Great flavor and definitely tastes better made a day before. Just add a little more mayo before serving if you feel it's a little dry....

Number Of Ingredients 18

MARINADE FOR CHICKEN
2 Tbsp olive oil
1 Tbsp balsamic vinegar
2 clove garlic, minced
1/4 tsp salt
1/8 tsp pepper
1/2 tsp onion powder
1 tsp italian seasoning
1 1/2 lb chicken breasts, boneless and skinless
SALAD WITH DRESSING
1 c celery, diced
1/4 c red onion, diced
1/2 c dried cherries
1/2 c light mayo
1 Tbsp creole mustard (i used dijon mustard)
1 Tbsp chives, chopped
1/4 tsp salt
1/8 tsp pepper

Steps:

  • 1. Mix all ingredients for marinade and combine with chicken. Marinate for at least 1 hour.
  • 2. Grill chicken and chop into bite size pieces.
  • 3. Combine ingredients for salad and dressing. Pour over grilled chopped chicken and mix well. Serve on kieser rolls.
  • 4. Can be made a day ahead. Before serving if it seems a little dry add a bit more mayo.
