Baked Tandoori-Style Chicken image

Such an easy way to enjoy tandoori chicken. Serve alongside your favorite Indian side dish.

6 chicken thighs, skinless
1/4 cup(s) fresh lemon juice
1/2 small onion, chopped
4 clove(s) garlic, minced
1 tablespoon(s) fresh ginger, grated
3 teaspoon(s) coriander seeds
1 tablespoon(s) cumin seeds
1 tablespoon(s) fresh lemon juice
1 teaspoon(s) salt
1/4 teaspoon(s) paprika
pinch of chili powder (indian)
1 cup(s) plain yogurt
red food coloring (optional)

Steps:

  • Preheat oven to 350 degrees. Brush the chicken meat with lemon juice and set aside for 30 minutes. Meanwhile, place the onion, garlic, ginger, coriander, cumin, 1 tbsp. lemon juice, and salt in a small food processor. Process until the mixture forms a smooth paste.
  • Combine the spice paste with paprika, chili powder and yogurt - mix well until smooth. Add several drops of red food coloring until the mixture becomes a deep red color.
  • Place chicken pieces in a plastic bag or shallow dish and spread the yogurt mixture liberally over the chicken. Allow chicken to marinate for a few hours or overnight.
  • Place chicken on a wire rack over a large baking pan. Bake for 45 minutes or until the chicken pieces are tender and fully cooked through.
