CHOCOLATE GANACHE CUIPCAKES (INA GARTEN) image

Number Of Ingredients 12

for cupcakes:
1/4 pound unsalted butter, room temp
1 cup sugar
4 extra-large eggs, room temp
1 (16 oz container) Hershey's syrup
1 tbs vanilla
1 cup all purpose flour
1 tsp instant coffee granules
for ganache:
1/2 cup heavy cream
8 oz semisweet chocolate chips
1/2 tsp instant coffee granules

Steps:

  • Cream butter and sugar until light and fluffy add eggs, 1 at a time. mix in chocolate syrup and vanilla. add flour and coffee and mix just until combined. do not overbeat or cupcakes will be tough scoop batter into muffin cups and bake for k30 minutes, or until jus tset in the middle. do not overbake. Let cool in the muffin pan. for ganache: cook heavy cream chocolate chips, and instant coffee in double boiler over simmering water until smooth and warm, stirring occasionally dip the tops of the cupcakes into the ganache. do not refrigerate.
