BAKED SWEET POTATOES AND APPLES image

3/4 cup dark corn syrup
1/2 packed lite brown sugar
6 T unsalted butter, divided
4 T dry sherry
2 1/2 t. cinnamon, divided
3 medium sweet potatoes, peeled, cut into 1 1/2 inch cubes
3/4 t. salt
3 small granny smith apples, peeled, cut into thin slices

Steps:

  • heat oven to 400 degrees bring salted water in large saucepan to boil and add potatoes til tender (12Min) Drain,put potatoes back into dry pot and cook over med. heat to dry out. While potatoes cook, put corn syrup, br sugar 4 T butter and sherry and 2 t. cinnamon in small saucepan, heat til butter melts, stir, set aside. Puree potatoes, salt and br sugar syrup in food processor. Spread hald potato mixture in greased shallow 7 cup baking dish (8x8) Put 1/2 of apples on top in single layer. spread remaining potato mixture over apples, arrange remaining apples on top. M Melt remaining 2T butter, combine with remaining t.cinnamon.brush over apples (can be prepared to this point 2 days in advance and refigerated, covered. Bring to room temp before baking, Bake covered with foil 20 min. uncover and bake til apples are brown about 25 min. Can be baked ahead, completely cooled and refigerated up to 2 days, covered airtight. Bring to room temp before reheating.
