BAKED POTATO CASSEROLE image

Number Of Ingredients 7

8 potatoes, peeled and sliced into 1/4 to 1/2 inch slices
1 pound American cheese, white
1 cup mayonnaise
1/2 cup onion, chopped
salt and pepper, to taste
1/2 pound bacon, partially fried and chopped
1/4 cup stuffed green olives, sliced (as garnish)

Steps:

  • Bring pot of salted water to a boil. Add potatoes and cook for 10-12 minutes (until they are fork tender). Drain and add back to cooking pot. Dry drained potatoes over high heat for 15 to 30 seconds. Add onion, cheese and mayo to potatoes. Stir until combined. Place in a greased 9 X 13 pan. Top with the bacon. Bake for 1 hour at 325F. Garnish with olives (they will dry out if you add before baking).
