I wouldn't call this steamed fish but it seems that they do in the Bahama's. No matter what's it's called it's a very tasty and healthy meal. In the islands everybody has their own recipe for steamed fish (or pork chops, chicken, crawfish etc.. ) and the sauce is basically the same for all. As there are no given amounts use as much or as little as you want and need feed the number of people at your table.

Steps:
- Saute celery, onions, sweet peppers and scotch bonnet with a little oil until soft. Add diced tomatoes, tomato paste, thyme sprigs and bay leaves. A little salt & pepper Simmer, covered for about one hour.
- Quickly pan-fry/sear fish with a little oil until they have a little surface color. Place fish pieces in sauce. Taste and correct seasoning of sauce with S&P and hot sauce to taste if needed. Simmer, covered, for about 15 minutes until fish is fork tender.
- Serve over steamed white rice with a dab of butter on rice.
