Bacon Egg Bake image

This is a great morning or brunch dish. Kinda like a quiche, but without the crust. This is for a basic idea, so you can add ham or green pepper, or onions would be great as well as spices like basil or parsley. I did not add them to this recipe because I tend to change it whenever I make them, depending on what I have. Use...

6 eggs
1/2 pkg bacon, cooked and crumbled
2 c hash browns, lightly browned
1 Tbsp cream cheese, softened
1 1/2 c cheddar cheese, shredded
2 Tbsp milk
salt and pepper
non-stick spray

Steps:

  • 1. Mix the eggs, milk and cream fheese until well blended. Salt and pepper to taste. Next mis in half the cheddar cheese and set aside.
  • 2. Spread the hash browns along the bottom of a 8x8 pan that is sprayed. Layer the bacon over the hash browns, then pour the egg mixture over the bacon and top with remaining cheese and bake at 350°for 45 min or until golden.
