AZTECA MEXICAN LASAGNA image

1 package of flour or corn tortillas
1 pound ground beef
1 cup salsa
1 (15oz) can tomato sauce
1 package taco seasoning mix
1 (16oz) carton cottage cheese
2 eggs
1 tsp oregano
1 1/2 cups shredded cheddar and monterey jack cheese, mixed

Steps:

  • Heat oven to 375. Brown meat and drain. Stir in salsa, tomato sauce and taco seasoning. Simmer, stirring frequently for 5min. In seperate bowl, combine cottage cheese, eggs and oregnano. Line bottom of lightly greased 13x9 baking dish with half of tortillas, overlapping edges. Top with half the meat mixture. Spoon cottage cheese mixture over meat. Arrange remaining tortillas over cheese mixture. Spread remaining meat mixture over all and top with shredded cheese. Bake 30-35min. or until bubbly. Let stand 10min. before serving.
