Aunt Alice's Chocolate Chiffon Cake image

Dinner at Aunt Alice's house was always a joy. She made scrumptious desserts. The chocolate chiffon cake is one of them.

2 eggs, separated
1-1/2 c sugar
1-3/4 c cake flour
3/4 tsp soda
3/4 tsp salt
1/3 c wesson oil
1 c buttermilk
2 squares chocolate, unsweetened
2 c whipping cream
1 c powdered sugar
1/2 c cocoa

Steps:

  • 1. Preheat oven to 350'. Grease 2- 8 inch round layer pans and dust with flour. Beat egg whites until frothy. Gradually add 1/2 cup of the sugar.
  • 2. Continue beating until very stiff and glossy.Set aside. Mix remaining sugar, flour, soda and salt. Add oil and buttermilk and beat well. Add egg yolks and melted chocolate.
  • 3. Fold in egg whites. Bake layers at 350' for 30-35 minutes. Cool. Spread layers with chocolate fluff frosting. Store in refrigerator until ready to serve.
  • 4. Chocolate Fluff Frosting: Mix together in chilled bowl: 2 cups whipping cream. 1 cup powdered sugar and 1/2 cup cocoa. Beat until stiff.
