Orange Brownies image

These are so good!! A nice, refreshing change from the normal chocolate brownies. They've been a hit at potlucks, bake sales, family parties, and at our school restaurant. I prefer to make them using the orange cream cheese buttercream; but the orange glaze is tasty as well. *I got this from one of the Paula Deen newsletters...

1 1/2 c all purpose flour
2 c granulated sugar
1 tsp salt
1 c butter, softened
4 large eggs
2 tsp pure orange extract
1 tsp grated orange zest
1 c confectioners' sugar
2 Tbsp orange juice, fresh
1 tsp grated orange zest

Steps:

  • 1. Preheat oven to 350 degrees F. Grease a 13x9x2 inch pan.
  • 2. In a medium bowl, stir together the flour, granulated sugar, and salt. Add the butter, eggs, extract and 1 tsp zest. Using a handheld electric mixer, beat until well blended. Pour batter into the prepared pan and bake for 30 minutes, or until light golden brown and set. Remove from the oven and pierce entire cake with a fork (if you are going to make the orange glaze).
  • 3. FOR THE GLAZE: Mix together the confectioner's sugar, orange juice, and remaining 1 tsp grated orange zest; stirring until smooth. Pour the glaze over the warm cake. Cool completely. Cut into squares.
  • 4. FOR THE ORANGE CREAM CHEESE BUTTERCREAM: In a large bowl, whip together 1 (8 oz) softened cream cheese and 4 tablespoons softened butter. Gradually beat in 1 lb confectioner's sugar until it's all combined & smooth. Beat in 2 T. orange zest and 2 T. fresh orange juice. Spread over cooled brownies. Cut into squares.
