Asparagus Ham Fettuccine image

I found this recipe years ago and it has been a favorite of my husband's ever since.

Number Of Ingredients 8

4 oz uncooked fettuccine noodles
1/2 lb asparagus cut into 1" pieces
1/2 lb cooked ham, cut into small pieces
2 green onions, chopped
2 Tbsp fresh sage (or 2 teasponns dry sage)
1/4 tsp pepper
2 Tbsp olive oil
1 c shredded cheddar cheese

Steps:

  • 1. Cook fettuccine noodels as directed on package in water. Add the asparagus to the noodles for the last 3 minutes to cook. Drain and rinse with cold water and drain again.
  • 2. Saute ham, onion, sage, and pepper in olive oil until tender. Mix ham mixture and noodle mixture together and saute for 1 minute longer. Sprinkle with cheddar cheese and mix. Swerve immediatley.
