Christmas Cranberry Salad image

From my Food Writer's Favorites cookbook. Go ahead and splurge by serving this dish at your next Christmas or holiday dinner. This colorful salad is pretty served in a glass bowl. I love cranberries and this salad sounds so good that I may have to make this dish sooner than the holidays. So easy to make.

Number Of Ingredients 7

2 cups cranberries (fresh or frozen, ground in a food processor)
3 cups miniature marshmallows
3/4 cup sugar
2 cups granny smith apples, diced (unpeeled)
1/2 cup seedless grapes, halved
1/2 cup pecans, chopped
1 cup heavy cream, whipped

Steps:

  • In a mixing bowl, combine cranberries, marshmallows and sugar, refrigerate overnight.
  • Add apples, grapes, and pecans to cranberry mixture; mix well. Fold in whipped cream. Serve immediately. Prep time does not include refrigeration time.
