Steps:
- Preheat oven to 350F. Lightly grease a 9x5 inch loaf pan; set aside.
- In a bowl, cover apricots with lukewarm water & let stand 30 minutes; drain. Remove zest from Orange. Juice the Orange & reserve. Place apricots, zest & raisins in food processor or finely chop. Add enough boiling water to Orange juice to make 1 cup and pour in a bowl over ground fruit. Stir in butter & sugar; beat in egg. In separate bowl, stir together flour, baking powder, salt, baking soda & walnuts; add to fruit mixture along with vanilla & stir just until flour is moistened. Pour into prepared loaf pan.
- Bake for 55-60 minutes. Makes 1 loaf.
