I can't take credit for this one but found it on a blog called Cornfed Mama's I almost melted (which wouldn't be to difficult in 100 degree temps!!) when I saw the pic! I LOVE anything with apples and this looks soo yummy! I haven't tried it yet but I plan on doing that this weekend :) Best part is you only use 1 measuring cup...

Steps:
- 1. Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla
- 2. Sprinkle with cinnamon, roll up, tucking in edges; place seam side down in prepared dish.
- 3. In medium saucepan over medium heat, combine butter,white sugar, brown sugar and water. Bring to a boil stiring constantly, reduce heat and simmer 3 minutes.
- 4. Pour sauce over enchiladas and let stand 45 minutes
- 5. Bake in preheated oven for 20 minutes, or until golden (she doesn't say what temp the oven should be on but I am guessing 350/400 (I will let you know once I try them)
- 6. Serve with Vanilla Ice cream !!
