1 (21 ounce) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
½ cup butter
½ cup white sugar
½ cup brown sugar
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon; roll up, tucking in edges; and place seam side down in prepared dish.
  • In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes. Pour sauce over enchiladas and let stand 30 minutes.
  • Bake in preheated oven 20 minutes, or until golden.

1 can(s) apple pie filling (21 oz)
1 tsp ground cinnamon
1/2 c butter
1/2 c white sugar (or splenda)
1/2 c brown sugar
1/2 c water
1 tsp vanilla
(6)8 inch-flour tortillas {pre cooked - store bought is great for this, just be sure to buy flour tortillas

Steps:

  • 1. Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon (I have my cinnamon in a shaker bottle, so I just sprinkle some on each as I am rolling them) roll up, tucking in edges; and place seam side down in prepared dish.
  • 2. In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes, remove from heat and stir in 1 teaspoon vanilla.
  • 3. Pour sauce over enchiladas and let stand 45 minutes .. Don't rush the 45 minute resting time for the sauce on the enchiladas before baking, this step helps to magically transforms the flour tortillas into a faux pasty dough.
  • 4. Bake in preheated oven at 350 degrees F for 30 minutes, or until golden Enjoy!!

  • Spoon fruit filling evenly down centers of tortillas.
  • Sprinkle with cinnamon.

These are SOOOOOOO delicious! I have also made these using peach pie filling in place of apple, it is just as good as the apple! I strongly suggest to double the complete recipe, I could eat pretty much this whole dish just myself, they are that good! you can use your own homemade apple pie filling for this in place of canned --- top these with vanilla ice cream or whipped cream :)

1/2 cup raisins
6 (8 inch) flour tortillas
1 1/2 teaspoons cinnamon
1/3 cup butter (no subs!)
1/2 cup sugar
1/2 cup light brown sugar
1/4 cup water
1/4 cup whipping cream
vanilla ice cream

Steps:

  • Butter a 2-quart baking dish (I use an 11 x 7-inch baking dish).
  • Divide and spoon the pie filling down the center of each tortilla, then sprinkle with raisins (if using).
  • Sprinkle the cinnamon lightly over the filling and raisins.
  • Roll up tortillas and place seam side down in the baking dish.
  • In a saucepan bring butter, white sugar, brown sugar, water and whipping cream to a boil; reduce heat and simmer, stirring constantly for about 3-4 minutes; pour over the enchiladas in the dish.
  • Let stand at room temperature for 30 minutes before baking.
  • Set oven to 350 degrees F.
  • Bake for about 20 minutes.
  • Serve warm with vanilla ice cream.

  • Preheat oven to 350°F. In a 2-quart saucepan, bring margarine, both sugars, and water to a boil over medium-high heat; then reduce heat to medium and cook for about 5 minutes, stirring constantly. Set aside to cool. (I ran a little water in the sink then set the pot of sauce in it, stirring occasionally.) Meanwhile, spoon pie filling in center of tortillas; then sprinkle lightly with apple pie spice. Roll up tortillas and place seam side down in a lightly buttered 11x8-inch (or equivalent) baking pan. Pour or spoon sauce evenly over tortillas; sprinkle tops with a little more apple pie spice, if desired. Bake for 20 to 25 minutes, or until sauce is bubbling and tops of tortillas are crisp. 6 apples, Golden Delicious, peeled, cored, thinly sliced
1 small lemon (juice of lemon should equate to 2 tablespoons)
1/4 cup butter
1/3 cup brown sugar, firmly packed
1/2 teaspoon cinnamon, scant
1 tablespoon cornstarch
8 egg roll wraps
melted butter (enought to brush the tops of the enchiladas)
1 tablespoon granulated sugar, mixed with
1/4 teaspoon ground cinnamon
1 cup sugar
2 tablespoons flour
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 cup cold water
2 tablespoons butter
2 teaspoons vanilla extract

Steps:

  • Toss apple slices with lemon juice. In a large skillet, melt 1/4 cup butter over medium heat; add sliced apples.
  • Sprinkle with the brown sugar and the 1/2 teaspoon cinnamon.
  • Cook, stirring, until apples are tender.
  • Mix cornstarch with a few teaspoons of cold water then mix into apples.
  • Continue cooking for a minute or two.
  • Spray with nonstick butter flavored cooking spray or butter a 11x7-inch baking dish. On a large plate, lay out egg roll wrapper.
  • Spoon a little of the apple mixture down the center.
  • Brush ends lightly with butter then fold ends over each other, forming a roll.
  • Lift and quickly move to the baking dish, placing each roll seam-side down. repeat with remaining 7 egg roll wrappers.
  • Remaining apple mixture will be baked around the egg rolls, so there is no need to over-fill them.
  • Brush tops of the filled wrappers with melted butter.
  • Spoon remaining apples all around the edge of the rolls.
  • Sprinkle with the sugar and cinnamon mixture.
  • Bake in a 350 degree oven for 20 to 25 minutes.
  • Meanwhile, prepare sauce.
  • In saucepan, mix together the sugar, flour, cinnamon, and nutmeg; blend in cold water.
  • Bring to a simmer and simmer until clear and thickened, about 8 minutes.
  • Blend in butter and vanilla.
  • Spoon the spiced vanilla sauce over the filled apple rolls in the pan and serve remaining sauce at the table.
  • Serve "enchiladas" warm, with ice cream, if desired.

1 - 21oz. can(s) apple pie filling
1/2 c white sugar and 1 tsp. cinnamon
1/2 c butter
1/2 c white sugar
1/2 c brown sugar
1/2 c water
1 pkg large flour tortillas - 8 count

Steps:

  • 1. Open your can of Apple Pie filling and scoop out into a bowl.
  • 2. Put 1/2 cup of pie filling into each flour tortilla and sprinkle with your sugar/cinnamon mixture.
  • 3. Roll them up tucking in sides and place seam side down in a sprayed 9x13 cake pan.
  • 4. NOTE: I doubled the recipe and used large flour tortillas. I put 1/2 cup filling in tortillas. You can use small tortillas and 1/4 cup of filling and not double the recipe. You dont have to use all of the sugar/cinnamon mixture. I just sprinkled some (your judgement) on the filling before rolling it up.
  • 5. FOR SAUCE: In saucepan, put in butter, white sugar and brown sugar and water. Bring to a boil stirring constantly and then simmer for three minutes. Pour or ladle sauce over tortillas and let set for 45 minutes. NOTE: I also doubled sauce ingredients because I used large tortillas. I didnt use all the sauce as it makes quite a bit. I made sure the sauce was half way up on the side of the enchiladas. Again, you will have quite a bit of sauce left over. I just didnt think there was enough sauce for the large tortillas so I doubled the sauce (your choice).
  • 6. After sitting for 45 minutes, Put into the oven and bake at 350 degrees for 30 minutes or until bubbly and lightly browned on top. Serve warm, next to, or on the side of some vanilla ice cream. Its delicious!

2 granny smith apples, large
1 1/2 stick butter, melted
1 c sugar
1 tsp cinnamon
1 can(s) citrus flavored soda, 12 oz

Steps:

  • 1. Peel, core and quarter apples, then halve each quarter. Unroll crescent rolls and separate at the perforations; place an apple section at the large end and roll to small end. Place apple rolls in rows in a 9 x 13 x 2 glass oven-proof dish.
  • 2. Melt butter, stir in sugar and cinnamon. Pour over rolled apples. Pour citrus soda over rolls.

I received this recipe from my daughter who received it from a friend at work. It is so good to top off any meal, but it is an excellent dessert to use with your Mexican menu. It is super easy and takes just a few minutes to put together.

cinnamon to sprinkle
1 c white sugar
1 c light brown sugar
2/3 c butter
3/4 c water
pinch of salt

Steps:

  • 1. Preheat oven to 350°. Spoon fruit evenly down the middle of your flour tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down into a sprayed 9x12 baking dish. Bring margarine, water & sugars & pinch of salt (this cuts the too sweet taste) to a boil in a medium saucepan. Reduce heat & simmer, stirring constantly for 3 minutes. Pour sauce evenly over tortillas and sprinkle with extra cinnamon. Bake for 30 - 45 minutes. They can be cut in 1/2 to make 24 servings. Top with vanilla ice cream. Spoon some of the caramel sauce over the ice cream. ***NOTE: I recently made this using Bonnie's Blue Ribbon Butter and Splenda in the place of the white sugar and it was delicious.

  • Peel, core and chop up the apples in small pieces. (Any type of apple will work. We use whatever apples that need to be used up)
  • Mix, margarine,white sugar,brown sugar and water in sauce pan on stove top. Bring to a boil,them simmer for 3 minutes.
