Ang's Turkey Burritos image

Turkey burritos are a lighter version of our favorite beef burritos. My husband actually prefers these over the local Mexican restaurant! Optional toppings: lettuce, fresh spinach, avocado, salsa, tomatoes, black olives, fat-free sour cream, low-fat Cheddar cheese, etc.

1 pound ground turkey
1 small onion, chopped
1 (15 ounce) can whole sweet corn, drained
1 (15 ounce) can black beans, drained and rinsed
1 (10 ounce) can diced tomatoes and green chile peppers, undrained
½ cup chopped red bell pepper, or to taste
2 teaspoons lime juice
¾ teaspoon garlic powder
¾ teaspoon chili powder
½ teaspoon ground cumin
8 (8 inch) whole wheat tortillas

  • Place tortillas on a microwave-safe plate. Heat in the microwave until warmed, 15 to 20 seconds. Divide turkey mixture over the warmed tortillas.
