Steps:
- preheat your oven to 350. cut acorn squash in half and scoop out seeds. place cut side up on a baking dish, add one cup of water to the dish and roast in preheated oven for about 60 minutes or until fork tender. set aside to cool. once cool, scoop out flesh and process in a food processor until smooth. lightly grease a 9x13 cake pan. in a bowl mix together squash, sugar, applesauce, eggs vanilla and salt. add flours, baking powder, baking soda, and cinnamon. pour into pan and bake for 30 - 40 minutes or until toothpick inserted in center comes out clean.
