My friend just had surgery on her right arm - and she also has 5 children all under 11 years old! So I decided to fix her some casseroles that her kids can heat up in the microwave. These are easy to make and reheat well. I used the Chinette one-time-use baking containers so she would not have to return dishes.

Steps:
- 1. Chicken Pot Pie Layer: chicken, vegetables, salt/pepper, cream-gravy blend in a 3 quart casserole or 9x13 dish. Cover with Crescent rolls. Bake 375° for 35-40 minutes. Cool, cover well, freeze.
- 2. Taco Casserole Layer: Corn kernels, beans, taco meat mixture*, 1½ cups shredded cheese. Bake 375° for 20 minutes. Add topping*, bake 10-15 minutes more. Cool, cover well, freeze. *Taco meat mixture: 1½ pounds browned ground meat, 1 can tomatoes/green chilies, 2 packets Goya seasoning mix, 1 tablespoon chili powder. Simmer until sauce is thickened. *Topping: 2/3 cup crushed Fritos, ½ cup shredded cheese.
- 3. Pizza Casserole Layer: cooked pasta, seasoned tomato sauce - use a little fresh garlic and dried oregano, crumbled browned sausage, onions, peppers, mushrooms. Bake 375° for 20 minutes. Top with shredded mozzarella, grated Parmesan, and sliced pepperoni. Continue baking for 10-15 minutes longer, until cheese is melted and bubbly. Cool, cover well, freeze.
- 4. Reheating Instructions Oven: Cover casserole with foil and bake at 350° until center registers 160°. Microwave: Cover with waxed paper or plastic wrap, vent. Heat on medium to medium-high power (50%-70%) for 5-10 minutes, or until center is hot.
