1 bone-in fully cooked spiral-sliced ham (9 to 10 pounds)
2-1/4 cups seedless raspberry jam
3 tablespoons white vinegar
3 chipotle peppers in adobo sauce, drained, seeded and minced
3 to 4 garlic cloves, minced
1 tablespoon coarsely ground pepper

Steps:

  • Place ham on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 2-1/2 hours;. , Meanwhile, in a small saucepan, combine the jam, vinegar, peppers and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Brush some of the sauce over ham. Bake 30-35 minutes longer or until thermometer reads 140°, brushing twice with sauce. Sprinkle pepper over ham. 2 tablespoons white vinegar

1/4 cup apple juice or dry white wine
2 tablespoons lemon juice
2 teaspoons cornstarch
1/3 cup seedless raspberry jam, divided
1 tablespoon butter

Steps:

  • In a saucepan, combine the apple juice, lemon juice and cornstarch; stir until smooth. Stir in half of the jam. Cook and stir over medium heat until thickened and bubbly. 1 cup packed brown sugar
3 tablespoons honey
2 tablespoons cider vinegar
2-1/4 cups ginger ale
4 chipotle peppers in adobo sauce, minced
3 garlic cloves, minced
1-1/2 teaspoons Dijon mustard
3/4 teaspoon ground cinnamon
3/4 teaspoon ground cumin

Steps:

  • Preheat oven to 325°. Place ham on a rack in a roasting pan. Using a sharp knife, score surface of ham with 1/2-in.-deep cuts in a diamond pattern. Bake, uncovered, 1-1/2 hours., Meanwhile, for glaze, in a small saucepan, mix brown sugar, honey, vinegar and ginger ale. Bring to a boil; cook until mixture is reduced by half, about 15 minutes.
