- Sprinkle chicken with salt and pepper. In a large nonstick skillet coated with cooking spray, cook chicken over medium heat for 5-7 minutes on each side or until a thermometer reads 170°., Meanwhile, in a small saucepan, combine the remaining ingredients. Bring to a boil; cook until liquid is reduced to 1/2 cup. Serve with chicken.

GRILLED RASPBERRY CHICKEN

- In a large resealable plastic bag, combine 1 cup vinaigrette and half of the rosemary. Add chicken. Seal bag and turn to coat; refrigerate for 1 hour. , In a small bowl, combine the jam, lime juice, soy sauce, garlic powder, and remaining vinaigrette and rosemary; set aside., Drain and discard marinade. Place chicken skin side down on grill rack. Grill, covered, over indirect medium heat for 20 minutes. Turn; grill 10-20 minutes longer or until juices a thermometer reads 180°, basting occasionally with raspberry sauce.

- Heat olive oil in a skillet over medium heat. Stir in jalapenos; cook until tender, about 5 minutes. Mix in garlic, and adobo sauce; bring to a simmer. Stir the raspberries into the sauce; cook until soft, about 3 minutes. Stir in the vinegar, salt, brown sugar, and white sugar. Mix well. Simmer until thickened and reduced by half, about 15 minutes. Transfer sauce to a heatproof bowl; allow to cool to room temperature before serving, about 20 minutes.

- (You can use the adobo the chilies are packed in if you like. It will make it hotter!).
- Combine all ingredients in a heavy sauce pan and simmer, stirring occasionally, until sugar is dissolved.
- Allow to cool a little if desired.
- Transfer to a food processor or blender and blend until sauce is smooth. I use my immersion blender.
- Remove seeds from sauce using a fine mesh strainer if desired.

I first had this as a teenage babysitter, when the children's mom prepared it for us to eat while she was out. The kids loved it, and so did I! Now I make it for my own kids.

- Place chicken in a 3-qt. slow cooker. In a small bowl, combine the spreadable fruit, soy sauce, mustard and pepper; pour over chicken. Cover and cook on low for 5-6 hours or until meat is tender., Remove chicken to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken.

RASPBERRY CHICKEN ADOBO
A light version of this popular dish. This one will get rave reviews and presents very well. The recipe was served with sugar snap pea pods so those are included with the recipe as an option. I had never cooked with anise seeds and was very surprised at the result. I did substitute 1 t of ground ginger for the fresh ginger and was very pleased with the result. Enjoy!

Steps:
- Place chicken in large frying pan.
- In small bowl combine raspberry vinaigrette dressing, garlic, ginger, anise seed, water and soy sauce.
- Pour over chicken and bring to a boil.
- Reduce heat, cover and simmer about 25 minutes.
- Remove chicken from pan, place on broiler pan sprayed with cooking spray.
- Broil 3 minutes on each side - 4 inches from broiler.
- Remove chicken to heated platter, cover and set aside.
- Bring sauce in frying pan to a boil and cook about 15 minutes or until thickened and reduced by about 1/2.
- To serve: pour a portion of the sauce on each of 4 individual plates.
- Thinly slice each chicken breast half across the grain and fan out slices on one side of each plate.
- Garnish with raspberries.
- Optional: Fan out fresh sugar snap pea pods on the other side of the plate.
