Time 45m

Number Of Ingredients 12

2-3 Puff Pastry Sheets
1 Fresh Raspberry (Large package)
1 Egg (whisked)
2 Tbsp. Confectioners Sugar (for dusting)
Raspberry Jam (optional)
2 c. Whole Milk
⅓ c. Corn Starch
½ c. Sugar
3 Egg Yolks
1 Tbsp. Vanilla Extract (or ½ tsp. vanilla bean)
2 Tbsp. Butter
½ tsp. Lemon Zest

Steps:

  • In a sauce pan over low-medium heat, bring the milk to boiling.
  • While you wait for the milk to come to a boil, in a glass bowl, whisk together egg yolks, corn starch, sugar, vanilla, and lemon zest.
  • Once the milk is boiling, pour the milk into the bowl, whisking while you pour to create a smooth texture.
  • Next, using a hand strainer, pour the custard mixture through the strainer back into the sauce pan to remove any lumps. Heat over medium-low, whisking continuously, until the mixture thickens up well. Add butter and whisk until the butter is melted.
  • Remove the custard from heat, pour into a glass bowl and cover with plastic wrap. Place the plastic wrap directly on the top layer of custard to prevent it from hardening while it cools. Allow to cool before assembling the pastries.
  • Once the custard cools, line a sheet pan with parchment paper and preheat the oven to 400°F. In a small bowl whisk an egg and set aside to wash the pastry with later.
  • Using a cutting board or a clean counter, cut the puff pastry sheet into 12 even sized rectangular pieces. Then slice a rectangle inside of the puff pastry rectangles. Poke the center rectangle with a fork. (See above photos for example)
  • Spoon 2 Tbsp of custard in the middle rectangle and then brush the edges with the egg wash. Place raspberries top down on the custard. Bake pastries for 12-13 minutes or until the crust is golden brown.
  • Remove from the oven and allow pastries to cool. Sprinkle with confectioners sugar and serve.
  • Additional: You can also brush the tarts with raspberry jam for an extra shine. Warm 1-2 Tbsp of jam with 2 tsp. of water in a mini bowl for 30 seconds. Use a pastry brush to apply onto the raspberries.

Time 1h30m

Number Of Ingredients 10

½ cup 120ml milk* (Note 1)
½ cup 120ml water
½ cup 115gr unsalted butter
1 tablespoon sugar
¼ teaspoon salt
1 cup 125gr all-purpose flour, sifted
4-5 large eggs (at room temperature)
2/3 cup heavy whipping cream
¼ cup raspberry jelly
Powdered sugar for dusting

Steps:

  • Preheat oven to 375°F (190°C). Line 2 baking sheets with parchment paper, or silicone mat.
  • In a medium saucepan, combine water, butter, sugar and salt. Slowly heat the mixture over medium heat, stirring frequently to dissolve sugar and melt the butter. Once sugar is dissolved and butter is melted, increase the heat to medium high heat and bring the mixture to a boil.
  • When the mixture is boiling, remove the saucepan from heat and add flour all at once. Quickly mix the mixture until all the flour is absorbed. (We just made panade!)
  • Replace the saucepan back to burner and reduce the heat to medium. Cook the dough, continuously mixing with a wooden spoon. The dough will start to form into a ball. Keep mixing for another 3-4 minutes until light crust forms on the bottom of the pan. (Note: It's important to cook for at least 3-4 minutes to dry out the panade.)
  • Transfer the dough into a mixing bowl with paddle attachment and mix it for a few minutes on low speed until the mixture is at room temperature, about 2 minutes. (No mixer? No problem. You can mix it with a wooden spoon!)
  • Add eggs one at a time, beating well after each addition. This will help to get egg absorbed into the dough quicker. Don't add more than 2 eggs at a time! This is important, as you might not need to add all the eggs. The dough should be smooth and shiny, thin enough to slowly fall into a ribbon, but too runny. (Read more details in this post!)
  • At this point choux pastry is done and ready to be piped into whatever size you want. Uncooked dough can also be refrigerated for up to 3 days in an airtight container.
  • Transfer the batter into a pastry bag and pipe into 1.5-inch rounds couple inches apart. Level peaked tops with a wet fingertip.
  • Bake for 25-30 minutes, one baking sheet at a time. The pastry shells should be golden brown, crispy and puffed up. (Note: If the creme puffs go flat as they come out of the oven, it means they are slightly undercooked and needs to be bake a bit longer. Simply put them back in the oven and bake for a few more minutes.) Transfer the shells onto a cooling rack to cool completely.
  • To make raspberry whipped cream, pour cold heavy whipping cream in a mixing bowl with whisk attachment.
  • Beat the cream on low speed (speed 2 or 4 on stand mixer) until slightly thickens.
  • Add raspberry jelly. Continue to mix on medium speed (speed 4) for a minute or two. You can increase the speed to 6 on stand mixer until the mixture reaches hard peaks. Keep a close eye on it, you don't want to over-beat it, or it'll turn into sweet butter. Transfer the filling into a pastry bag fitted with a piping tip of your choice. (I used Wilton here.)
  • To assemble, using a sharp pairing knife, slice top of each creme puff horizontally. You don't have to cut all the way through.
  • Pipe the filling into each pastry shell and place the top of the creme puffs back.
  • Arrange the filled creme puffs on a platter and dust with powdered sugar and serve.

Time 1h20m

Yield 10 servings

Number Of Ingredients 9

Nonstick cooking spray, for the baking sheet and molds
1 sheet frozen puff pastry (from a 17.3-ounce package), thawed in the fridge
12 ounces cream cheese, at room temperature
3/4 cup unsalted butter, at room temperature
3 cups confectioners' sugar, plus more for garnish
1/2 teaspoon kosher salt
1/2 cup blackberry preserves
Blackberries, for garnish
Fresh mint leaves, for garnish

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick spray.
  • Fold a 12-inch square sheet of aluminum foil in half, turn and fold in half again; you should have a small square. Now, fold diagonally and once more again. You will now have a triangle. Wrap it around your index finger and mold into a cone shape. Repeat 9 more times to make 10 molds. (Note: these can be reused.) Lightly spray the foil molds with nonstick spray.
  • Lay out the puff pastry sheet on a work surface with one of the long sides facing you. Cut the pastry into 3/4-inch-wide strips from top to bottom to make 20 strips. Wrap 2 pastry strips around each mold, overlapping a little with each wrap. Transfer to the prepared baking sheet and bake until lightly browned around the edges, 16 to 18 minutes. Let cool.
  • Meanwhile, whisk together the cream cheese and butter in a bowl. Add the confectioners' sugar in batches with the salt. Gently fold in the blackberry preserves (so there is some veining). Transfer to a disposable pastry bag fitted with a large star tip and place in the fridge for at least 30 minutes to let the filling firm up.
  • Pipe the filling into each pastry from the wider end. Serve with a dusting of confectioners' sugar and some blackberries and mint.

Fresh Raspberry Cream Cheese Puff Pastry Tart image

Lush raspberries atop a fluffy lemon-vanilla cream cheese filling and a buttery golden puff pastry crust. This easy tart is sure to impress the guests at the holiday table. Only you need to know how easy it was to whip up!

Provided by Kare for Kitchen Treaty

Time 35m

Number Of Ingredients 8

1 10- inch x 10-inch frozen puff pastry sheet (thawed)
1 cup heavy whipping cream (chilled)
1 8- ounce box cream cheese (softened (room temperature))
3 tablespoons + 3 tablespoons honey (divided)
Zest of 1 medium lemon
2 teaspoon fresh lemon juice
1 teaspoon vanilla extract
3 6-ounce packs Driscoll's raspberries (about 3 cups)

Steps:

  • Preheat oven to 400 degrees Fahrenheit, or to the temperature recommended on your package of puff pastry. Line a large baking sheet with parchment paper. Sprinkle a little flour on your pastry surface and, with a rolling pin, roll pastry sheet to approx 11-inches by 14-inches in size. Transfer pastry to baking sheet. With a butter knife, lightly score a 1/2-inch border around the edges, then fold the edge up and toward the center, pressing lightly, to create a neat border. Score the center lightly with a knife, taking care to not cut all of the way through (but if you accidentally do, it'll be okay). Bake until golden brown, about 10-12 minutes, or the time indicated on the package of puff pastry. Remove from oven and let cool completely.
  • Affix a stand mixer or hand mixer with the whisk attachment. In the bowl of the mixer or in a large bowl, beat the heavy whipping cream until soft peaks form. Scoop whipped cream into a medium bowl. To the bowl of the mixer or the large bowl, add the cream cheese, 3 tablespoons honey, lemon zest, lemon juice, and vanilla extract. Whip until smooth and a little fluffy, about 2 minutes.
  • Fold cream cheese mixture into whipping cream, gently stirring and folding just until blended. Pile the filling into the center of the cooled puff pastry tart shell and, with a butter knife. spread the filling gently toward the edges. Line the top with raspberries, bottoms up. Drizzle with remaining 3 tablespoons honey. Cut into squares and serve.
