ENDIVE, RADICCHIO AND WALNUT SALAD



Endive, Radicchio and Walnut Salad image

2 Belgian endives (10 ounces), washed
1 small head radicchio (5 ounces), washed
2 carrots (6 ounces), peeled and shredded (1 1/2 cups)
1/2 cup walnut pieces
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 tablespoons red wine vinegar
3 tablespoons virgin olive oil

Steps:

  • Cut 1 1/2 inches from the root end of the 2 endives and the radicchio head, and cut these root end pieces into 1/2-inch chunks. (You should have 3 about cups.) Reserve the pointed endive leaf tips and the radicchio leaves for use later in the recipe. Combine the root end chunks with the shredded carrot and nuts in a bowl.
  • Combine the dressing ingredients in a small bowl, then add the dressing to the endive and radicchio pieces, carrots, and nuts. Toss well.
  • Arrange the radicchio leaves attractively on four plates, and spoon the dressed mixture into the center of the leaves. Arrange the endive leaf tips so they stand, pointed tips up, next to one another all around the dressed salad. Serve immediately.

WATERCRESS, WALNUT, AND ROQUEFORT SALAD

For caramelized walnuts:
1/4 cup walnuts
1 tablespoon sugar
1/4 teaspoon salt
1 teaspoon walnut oil*
For dressing:
1 small garlic clove
1/4 teaspoon salt
1 1/2 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
2 tablespoons walnut oil*
1 tablespoon extra-virgin olive oil
1/2 teaspoon finely chopped fresh tarragon leaves or a pinch dried tarragon, crumbled
1 Belgian endive
2 bunches watercress (about 6 cups packed)
2 ounces Roquefort, crumbled (about 1/2 cup)
*available at specialty foods shops and some supermarkets

Steps:

  • Make caramelized walnuts:
  • Preheat oven to 350°F.
  • In baking pan toast nuts in oven until golden and fragrant, about 10 minutes. In a small bowl stir together caramelized-walnuts ingredients and in a small nonstick skillet cook over moderate heat, stirring, until sugar caramelizes and coats nuts. Transfer mixture to a bowl and cool. Break walnuts apart.
  • Make dressing:
  • Mince and mash garlic to a paste with salt and in a bowl whisk with mustard and lemon juice. Add oils in a slow stream, whisking until emulsified and whisk in tarragon and salt and pepper to taste.
  • Trim endive and cut into julienne strips. Discard coarse stems from watercress and toss with endive and dressing. Top salad with Roquefort and walnuts.

RADICCHIO AND WATERCRESS SALAD WITH PARMESAN CURLS

2 tablespoons white-wine vinegar
1/2 teaspoon Dijon-style mustard
2 teaspoons finely chopped fresh parsley leaves
1/3 cup extra-virgin olive oil
2 bunches of watercress, trimmed, washed well, spun dry, and separated into small sprigs
2 small heads of radicchio , shredded fine, washed well, and spun dry
3 scallions, sliced
6 ounces Parmesan at room temperature, shaved into curls with a vegetable peeler

Steps:

  • In a small bowl whisk together the vinegar, the mustard, the parsley, and salt and pepper to taste, add the oil in a stream, whisking , and whisk the dressing until it is emulsified. In a large bowl toss together the watercress, the radicchio, and the scallions, pour the dressing over the salad greens, and toss the mixture well. Transfer the salad to a serving bowl and arrange the Parmesan curls on top.

2 teaspoons country Dijon mustard
Pinch of sugar
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
2 bunches watercress, cut into 2-inch pieces (5 cups)
1 head radicchio, cut into 1-inch slices (1/2 cup)
1 bunch radishes, trimmed and thinly sliced (1 cup)

Steps:

  • In a salad bowl, whisk together lemon juice, Dijon, and sugar; season with salt and pepper. Slowly add oil, whisking constantly, until emulsified. Add watercress, radicchio, and radishes. Toss to evenly coat in dressing; serve.

1/4 teaspoon freshly ground pepper
1/4 cup walnut oil or extra-virgin olive oil
2 heads radicchio, preferably Treviso (about 1 1/4 pounds total), leaves separated
1/3 cup walnut halves

Steps:

  • Whisk together vinegar, salt, and pepper in a large bowl. Add oil in a slow, steady stream, whisking until emulsified. (If using olive oil, you may want to warm the oil and walnuts first over low heat in a small pan for a few minutes. Then let cool to room temperature to infuse the oil with flavor.)
  • Add radicchio to dressing, and toss. Divide among 4 serving plates, and sprinkle with walnuts.
