Mashed Potatoes with Fried Shallots image

Great mashed potatoes with a crunch

Number Of Ingredients 5

6 shallot chopped
2 1/2 lb red potatoes about 5 large peeled
1/2 stick butter
salt and pepper
cream of milk for consistency

Steps:

  • 1. Place about 1 inch oil in skillet. Fry the shallots in hot but not smoking oil in batches until brown and crispy. Remove with slotted spoon to plate and set aside.
  • 2. Cook the potatoes in boiling salted water. Drain. Put through a ricer into a bowl containing the butter. Stir and add cream or milk to desired consistency. Stir in the shallots. Taste and adjust for salt and pepper Serve with butter or gravy
