Saw this on Rachael Ray's 4th of July show this year and had to try it. We were very pleased, this is a potato salad made with gnocchi. According to Rachael, this is a really good way to avoid the mess of peeling potatoes and hot boiling water for a long time in the July heat because gnocchi boils in just a couple minutes. Also, if you're making it for a BBQ you don't have to worry about it sitting out for a period of time because the dressing is oil based instead of mayo based like most potato salads. Enjoy!

2 lbs gnocchi
3 tablespoons Dijon mustard
2 tablespoons white wine vinegar
1/3 cup extra virgin olive oil
salt
pepper
4 celery ribs, diced
1/2 red onion, finely chopped
2 roasted red peppers, chopped
1 (4 ounce) jar marinated mushrooms, drained
1/2 cup flat leaf parsley, chopped

Steps:

  • Place a large pot of water over high heat to boil the gnocchi.
  • Once the water is boiling, drop the gnocchi into the pot and cook them for 3 minutes, or until they float.
  • While the gnocchi are cooking, grab a large mixing bowl and whisk together the Dijon mustard and white wine vinegar.
  • Stream the olive oil into the bowl while whisking, then season the dressing with salt and freshly ground black pepper.
  • Add your veggies and parsley to the mixing bowl.
  • Drain the gnocchi and toss them, still hot, into the mixing bowl.
  • You can serve the salad now or let it chill in the refrigerator for a couple of hours to develop more of the flavors.
  • Freshen it up with an extra drizzle of olive oil when you are ready to serve.

DEVILED POTATO AND EGG SALAD



Deviled Potato and Egg Salad image

4 large eggs
1 1/2 pounds small Yukon gold potatoes, halved and quartered
Salt
1 cup chicken stock
1 small onion, peeled
1 small red chile seeded and finely chopped
2 ribs celery, chopped
1 teaspoon paprika, 1/3 palmful
A small handful flat-leaf parsley, finely chopped
Freshly ground black pepper
3 tablespoons cider vinegar
2 rounded tablespoons yellow mustard
1 tablespoon Worcestershire
2 teaspoons hot sauce
1/3 cup extra-virgin olive oil

Steps:

  • In a medium pot, add the eggs and cover with water. Bring to a full boil over medium heat, then cover the pot and turn off the heat. Let the eggs stand 10 minutes. Rinse under cold water, then roll and crack the shells. Put the eggs into cold water a few minutes to loosen the shells. Peel and chop the eggs and put them into a small bowl.
  • Add the potatoes to a large pot and cover with water. Bring the potatoes to a boil over medium heat and salt the water. Cook until tender, about 12 to 15 minutes.
  • Warm the chicken stock in small pot over low heat while the potatoes cook.
  • Drain the potatoes, put them into a serving bowl and douse them with stock while very hot. Grate the onion over the potatoes. Stir in the chile pepper, celery, paprika, parsley and salt and pepper, to taste.
  • In a small bowl, whisk together the vinegar, mustard, Worcestershire, hot sauce and oil.
  • Add the eggs to the potato salad and pour in the dressing. Toss to combine and serve.

CHIPOTLE POTATO SALAD



Chipotle Potato Salad image

4 large russet potatoes, about 2 1/2 pounds, peeled and thinly sliced
Salt
2 chipotles in adobo sauce, chopped, plus 2 tablespoons of sauce
3 tablespoons orange marmalade
3 tablespoons orange juice
3 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil. eyeball it
1 small red onion or 1/2 large, chopped
Handful chopped cilantro leaves, 2 tablespoons
Couple sprigs fresh oregano, finely chopped (or a couple pinches dried)
Salt and pepper

Steps:

  • Place potatoes in a pot and cover with water. Bring water to a boil and season water liberally with salt and cook the potatoes until just fork tender, 8 to 9 minutes.
  • Combine chipotles, sauce, marmalade, juice, vinegar in a bowl then whisk in the extra-virgin olive oil.
  • Drain the potatoes well, return them to hot pot to let water evaporate, then add immediately to dressing. The dressing will be better absorbed by warm taters. Toss with onions and herbs and season the salad with salt and pepper, to taste. Serve warm or chill. Drizzle a little more extra-virgin olive oil over the salad if it gets dry.

YELLOW MUSTARD POTATO SALAD



Yellow Mustard Potato Salad image

2 1/2 pounds russet potatoes, 3 medium-large potatoes, peeled and cubed
2 ribs celery, finely chopped
1/2 small to medium yellow skinned onion, finely chopped
3 tablespoons chopped pimento, drained
3 tablespoons sweet pickle relish
1/3 cup mayonnaise, eyeball it
1/3 cup yellow mustard, eyeball it
Salt and pepper
2 tablespoons chopped parsley, optional

Steps:

  • Boil potatoes in salted water 10 to12 minutes, or until just tender. Drain the potatoes and spread out onto a cookie sheet to cool quickly, about 10 minutes.
  • In a bowl, combine celery, onion, pimento, relish, mayonnaise and mustard.
  • When you are ready to serve, combine cooled potatoes with other ingredients. Stir the potatoes to combine and season with salt and pepper.

DEVILED POTATO SALAD



Deviled Potato Salad image

5 all-purpose potatoes, peeled and diced
Coarse salt
1/4 onion
3 tablespoons prepared yellow mustard
1/2 cup mayonnaise, eyeball the amount
1 teaspoon sweet paprika
1 teaspoon hot cayenne pepper sauce (recommended: Tabasco or Frank's Red Hot)
Salt and freshly ground black pepper
2 scallions, thinly sliced, for garnish

Steps:

  • Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes. Drain cooked potatoes and return to the warm pot to dry them out. Let the potatoes stand 2 minutes, then spread potatoes out on to a cookie sheet to quick-cool them.
  • In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine. Add potatoes to the bowl and stir to evenly distribute dressing. Season potato salad with salt and pepper and taste to adjust your seasonings. Top servings of salad with chopped scallions.

POTATO SALAD

dill2 1/2 pounds russet potatoes, peeled and diced
1 quart pork or chicken stock (recommended: Kitchen Basics)
1 small bunch scallions, finely chopped
3 to 4 ribs celery with leafy tops, chopped
3 tablespoons white wine vinegar
1 rounded tablespoon sugar
2 tablespoons prepared horseradish
1/3 cup extra-virgin olive oil
1 tablespoon celery seed, optional
A generous handful dill, chopped
Salt and freshly ground black pepper

Steps:

  • Cover potatoes with stock and enough water to cover the potatoes by 1-inch. Bring to a boil and cook potatoes 12 to 15 minutes until tender. Drain potatoes and place back in hot pot.
  • Combine the scallions, celery, vinegar, sugar, horseradish and olive oil in a small bowl. Pour over the hot potatoes to absorb.
  • Season the salad with celery seed, dill, salt and pepper.
