ROASTED ASPARAGUS WITH FETA CHEESE AND BACON image

Yield Makes 2 pounds asparagus

Number Of Ingredients 6

6 bacon slices, browned until crisp
2 pounds asparagus, tough ends trimmed off
2 tablespoons olive oil
lemon juice
salt & pepper to taste
4 ounces feta cheese, crumbled

Steps:

  • Preheat oven to 450 degrees. Spray large rimmed cookie sheet with PAM. Arrange asparagus on sheet and sprinkle with olive oil, rolling asparagus till coated. Sprinkle with lemon juice pretty liberally then salt and pepper. Crumble feta cheese on top then sprinkle bacon on top of cheese. Roast for 20 minutes or till tender crisp. Serve immediately.
