Cold Soba Noodle Salad image

This recipe is from Pasta Revolution by America's Test Kitchen. I served this to my three girlfriends for a luncheon and it was a big smash! The chicken on the side with homemade bread sticks made this meal complete. This recipe will serve four adults.

14 oz dried soba noodles
1 Tbsp salt
1/2 tsp grated fresh ginger
1 Tbsp vegetable oil
1/4 c soy sauce
3 Tbsp mirin
1/2 tsp sugar
1/4 tsp wasabi paste or powder
4 large red radshes, trimmed and shredded
2 large green onions cut on the bias
1 sheet(s) nori, cut into matchstick slices
1/4 c (opt) bonito flakes
4 small (opt) chicken breast

Steps:

  • 1. *Bring 4 quarts water to boil in large pot. *Add noodles and salt and cook, stirring often, until tender. *Drain noodles, rinse with cold water, and drain again, leaving noodles slightly wet. *Transfer to large bowl and toss with oil.
  • 2. *Whisk soy sauce, MIRIN, sugar, ginger, and wasabi together in small bowl, then pour over noodles. *Add radishes and green onions *Toss until well combined. *Sprinkle individual portions with nori and bonito flakes, if using.
  • 3. NOTE: I sautéed some chicken breast in butter, sliced and put on the plate with the noodles...great luncheon with my friends!
