  • Cover, reduce heat to low, simmer until lemon slices are nearly tender (peel will appear translucent), about 10 minutes.
  • Cool; store in the refrigerator up to one week.

240g brown rice
500ml vegetable stock
4 boneless and skinless salmon fillets
1 tsp ground cinnamon
1 tsp ground cumin
1 tsp turmeric
1 preserved lemon from a jar, skin finely chopped, flesh and seeds discarded
130g pitted green olives , sliced
small pack parsley , roughly chopped

Steps:

  • Put the rice in a saucepan, cover with the vegetable stock and bring to the boil. Once boiling, reduce the heat to a simmer, cover and cook for 15 mins. Turn off the heat and leave the rice to sit for 15 mins without removing the lid.
  • Meanwhile, put the salmon fillets on a microwaveable plate, season well and cover with cling film. Cook in the microwave on high for 4 mins until just cooked. When the rice is ready, stir through the spices, preserved lemon, olives, parsley and some seasoning. Flake the salmon and lightly stir through the rice, trying not to break up the fish too much, then serve.

1 ½ pounds mixed fingerling potatoes
2 large lemons
2 tablespoons coarse kosher salt
3 tablespoons white balsamic vinegar
3 tablespoons extra-virgin olive oil
1 ½ teaspoons whole cumin seeds
¾ teaspoon whole coriander seeds
Ground black pepper to taste
4 green onions, thinly sliced
⅓ cup chopped fresh dill
2 cups baby arugula

Steps:

  • Cook potatoes in large pot of boiling salted water until just tender when pierced with skewer, about 15 minutes. Drain and cool slightly.
  • Meanwhile, slice 1 lemon into 1/8-inch-thick rounds. Combine sliced lemon, 2 cups water and 2 tablespoons kosher salt in small saucepan; bring to boil. Reduce heat and simmer until lemon slices are tender, about 10 minutes. Drain lemons, then very coarsely chop. Cut remaining lemon in half and squeeze out enough juice to measure 2 tablespoons. Mix chopped lemons, 2 tablespoons lemon juice, white balsamic and oil in small bowl. Coarsely crush cumin and coriander seeds using mortar and pestle (or wrap in foil and pound firmly using rolling pin). Mix seeds into lemon dressing. Season to taste with pepper.
  • Cut lukewarm potatoes lengthwise in half. Place in large shallow bowl. Mix in green onions and dill. Pour lemon dressing over and toss to coat. Season to taste with salt and pepper. Add arugula and toss gently. Serve salad slightly lukewarm or at room temperature.

6 cups large pearl couscous
Water
2 cups roughly chopped cilantro leaves
4 lemons, sliced in 1/4-inch slices
Salt and freshly ground black pepper

Steps:

  • If the couscous is instant, follow the instructions on the packet.
  • For non-instant couscous, place the couscous into a large bowl. Fill a stock pot or large pasta pot 3/4 of the way with water. Bring water to a boil. Pour the couscous into the boiling water and stir. Cook for 7 to 8 minutes until the couscous is tender. Drain the couscous and toss in preserved lemon and cilantro. Season with salt and pepper.
  • Quick preserved lemon: Slice 2 lemons into 1/4-inch slices, lay out on a plate and salt on 1 side. Turn over and salt the other. Stack on top of themselves and let sit for 20 minutes in a baking dish. Rinse gently with cold water and dice into 1/2-inch pieces.

4 1/2 8-ounce bottles clam juice
2 1/4 cups (or more) water
3/4 cup heavy whipping cream
1 1/2 cups polenta (coarse cornmeal)
3/4 teaspoon hot pepper sauce

Scampi:
2 tablespoons extra-virgin olive oil
12 uncooked extra-large shrimp (8 to 10 per pound), peeled, deveined, butterflied, flattened
1 cup finely chopped fresh fennel
1/2 cup finely chopped plum tomatoes
1/3 cup minced shallots
4 teaspoons chopped Quick-Preserved Lemon
1/4 cup Pernod or other anise-flavored liqueur

Ingredient Info: Polenta is sold at some supermarkets and at natural foods stores and Italian markets. If unavailable, substitute an equal amount of regular yellow cornmeal and cook about half as long.

Steps:

  • For polenta:
  • Bring clam juice, 2 1/4 cups water, and cream to boil in heavy large saucepan over medium-high heat. Gradually whisk in polenta. Reduce heat to medium-low. Simmer polenta until thick and tender, stirring constantly, 15 to 20 minutes. Add hot pepper sauce; season with salt and freshly ground pepper. Cover to keep warm (if polenta becomes firm, add 1/3 cup water and stir over low heat to loosen and rewarm).
  • For scampi:
  • Heat oil in large skillet over medium-high heat. Sprinkle shrimp on 1 side with coarse salt and pepper. Add to skillet; sear 1 minute per side. Transfer shrimp to plate. Add fennel, tomatoes, shallots, preserved lemon, and garlic. Sauté until fennel is tender, about 4 minutes. Add Pernod; boil 1 minute. Add cream; boil 1 minute. Return shrimp to skillet. Toss until just opaque in center, about 1 minute.
  • Spoon polenta onto plates. Top with shrimp and sauce.

A blend of Moroccan herbs and spices dress up your chicken for your next summer cook-out. Also a shortcut to an age-old preservation technique of preserving lemons. Prep time does not include marinating time, or the 24 hours until can use preserved lemon.

3 lb boneless, skinless chicken thighs cut into 2" pieces
2 Tbsp freshly chopped parsley
1 Tbsp ground cumin
2 tsp ground cinnamon
1 tsp ground coriander
1/2 tsp ground ginger
1/2 tsp paprika
1/2 tsp cayenne
2 Tbsp minced garlic
1/2 tsp black pepper
1/2 tsp salt
olive oil, extra virgin
skewers
couscous, for serving
yogurt sauce, for serving
FOR "PRESERVED" LEMONS:
3 meyer lemons, scrubbed clean
1 Tbsp brown sugar
1 Tbsp kosher salt
3 Tbsp freshly squeezed lemon juice
1 Tbsp chili flakes (optional)
1 quart-size jar with lid for "aging"

Steps:

  • 1. In a bowl combine parsley, cumin, cinnamon, coriander, ginger, paprika, cayenne, garlic, black pepper, and sea salt. Stir to combine.
  • 2. Toss chicken in prepared spice mixture along with enough olive oil to coat evenly. Marinate in the refrigerator for 2 hours, preferably overnight.
  • 3. Prepare a gas or charcoal grill to high heat, 450-500 Fahrenheit degrees.
  • 4. Skewer chicken by "folding" pieces onto skewer alternating every couple pieces with Preserved lemon slices. Repeat with remaining skewers.
  • 5. Grill skewers over high heat, turning once for about 10 minutes or until chicken is cooked through. Serve skewers with couscous and yogurt sauce.
  • 6. For "Preserved" Lemons: Slice lemons into ¼" thick rounds and toss together with remaining ingredients.
  • 7. Pile lemons into jar and cover with lid. Keep at room temperature for 24 hours.
  • 8. Transfer jar to refrigerator and store for up to 2 weeks.

4 lemons, scrubbed
1/4 cup kosher salt
1/4 cup sugar
4 bay leaves, coarsely chopped or crushed
1 dried chili pod, split open and coarsely chopped
Extra-virgin olive oil to cover

Steps:

  • Remove the zest from the lemons with a vegetable peeler (be careful not to take off too much of the white pith) and place in a small bowl. Toss with the salt, sugar, bay leaves, chili, and the juice of one of the lemons. Refrigerate for 2 hours. Remove the zest from the mixture, rinse, pat dry, and cover with extra-virgin olive oil to store in the refrigerator for up to a month.
