Toddler Baked Oatmeal image

My 2-yr old has always disliked oatmeal, so I thought I'd try a baked version - and he's eating it up today! He also has had an issue with gaining weight so I've fatted this version up - you can always use a lower fat milk, and even leave the oil out. Also, you could use 2 mashed bananas for the 1/2 cup of applesauce. I cut these into 8 strips and then wrap each one separately and put in fridge or freezer. They defrost easily in the microwave. You can also double the recipe and put in 8x8 pan.

1 cup rolled oats
1/2 cup whole milk
1 egg
2 tablespoons oil
1/2 cup applesauce
1/4 cup brown sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Beat egg with milk.
  • Stir in oil, applesauce, vanilla.
  • Mix in oats, brown sugar and cinnamon.
  • Pour into greased 5x9 loaf pan.
  • Bake in 350 F oven for 30 minutes.
