EASY SPANISH RICE
Cook a pot of rice using chicken broth, tomato sauce, and a few seasonings to make this quick and easy Spanish Rice. It's the perfect base for rice bowls or a delicious side dish to your favorite Mexican entrees!

Steps:
- In a medium saucepan set over medium heat, melt together olive oil and butter. Add rice and stir to coat with oil/butter. Cook, stirring frequently, for about 2 to 3 minutes, until rice is toasted.
- Stir in chicken broth, tomato sauce, chili powder, cumin, garlic salt, oregano, and diced tomatoes (if using). Increase heat to high and bring to a boil, stirring occasionally. Stir well, reduce heat to low, place lid on pot, and cook at a gentle simmer for 20 minutes (or whatever amount of time is directed on your bag of rice; see NOTES below). If rice is not quite tender or liquid is not absorbed after 20 minutes, replace lid and cook for 2 to 4 minutes longer. Remove from heat, leave covered, and allow to rest for a few minutes. Fluff rice with a fork and serve.

- Cook and stir onion, garlic, and vegetable oil in a skillet over medium heat until onions are softened, about 5 minutes.
- Stir rice into onion mixture and cook, stirring often, until rice becomes slightly opaque, 1 to 2 minutes.
- Stir chicken broth, vegetable juice, and taco seasoning into rice mixture and bring to a boil. Cover and simmer over low heat until rice has absorbed most of the liquid, about 5 minutes.

ELSWET'S DELUXE SPANISH RICE
The base recipe for this came from the Wise Encyclopedia of Cookery [1970's version]. my Wife has adapted the recipe and, over the years, perfected it. This is rich without being heavy. It is creamy without being too liquid. It is spicy, but not uncomfortably so, and goes with just about anything you wish to serve it with. We have it most often with home made chimis or broiled steak. ;) Hope you love it as much as we do. We use brown rice, as the carbs are less, and my Lady is diabetic. Feel free to substitute white rice, as you wish. To make the chicken stock of boullion cubes, 6 chicken cubes to 6 cups hot water and stir until the cubes are completely melted.

- In a four-quart sauce pan, over a medium heat, heat the oil. Add in the brown rice and cook, stirring constantly until rice is lightly toasted. [This step requires constant attention.].
- Add chopped onion, green onion, bell pepper, celery, garlic, salt, cayenne pepper, chili powder, and cumin. Stir until blended, and continue cooking until onions begin changing translucent.
- Add tomatoes and chicken stock [or bullion water]. Return to boiling, reduce heat to low, cover, and cook for approximately 20 minutes.
- Add the cream cheese. Stir well until the cream cheese is entirely melted and blended, recover, and cook for approximately 15 more minutes.
- Allow to stand, removed from heat, for 5-8 minutes, fluff with a fork, garnish with cheese and black olives, and serve hot!
- NOTE: This may be served as a side dish, or with sliced smoked sausage, shredded chicken or beef, shrimp, or other seafood and served as a main dish. Also, if you want it more spicy, you can add in the cumin and cayenne while you are toasting the rice. That will breatly enhance the heat level of these spices. Hope you enjoy it!

QUICK & EZ SPANISH RICE
Another iron skillet recipe from my childhood. Mom had to stretch the budget and make it tasty for all us younguns. Feel free to adjust spices to suit your own tastes.

Steps:
- Spray non stick or iron skillet with no stick spray and brown meat.
- Remove meat from skillet and set aside.
- Saute onion and peppers until just tender and add meat back to skillet.
- Drain rotel tomatoes and reserve liquid.
- Add tomatoes, garlic and spices to meat.
- Add enough water to make 2 cups to rotel liquid and add to meat along with the tomato sauce.
- Stir in rice and cover.
- Either simmer over low heat or put in oven at 350 till liquid is absorbed and rice is tender.
- Sprinkle cheese over top and let melt just before serving.

QUICK DELUXE SPANISH RICE
Steps:
- Brown ground beef on medium setting, and poke it while cooking to break up the meat. When it's turned color but not very brown, add rice and let it cook until it's opaque or golden. Watch carefully and stir occasionally.
- In about ten minutes, pour in the diced tomatoes. The liquid will be enough for the dish but if you think you need more don't hesitate to add a little water. Add a thin layer of salsa on top and cover with lid. Turn down heat to simmer or low.
- Now shred your cheese and get any other additions you want to add. Look at your pan and see if the rice has fluffed up. It should take more than twenty minutes.
- Add the can of chili and the additions and stir. Recover for just long enough to heat chili through, about ten minutes, and then add cheese and handful of corn chips. Cover and turn off burner.
- Uncover in 10 minutes if you want crisper chips. Serve with a salad or vegetable and this is a meal!
