SMOKY SCALLOP CHOWDER WITH BACON image

4 slices bacon, chopped
2 potatoes peeled & chopped
2 ribs celery, diced
1 onion, diced
1tsp dried thyme
1/2 tsp smoked paprika
1/4 tsp each salt & pepper
1 bay leaf
4tsp all-purpose flour
2cups milk
1/2cup clam juice
1lb sea scallops
2tbsp chopped fresh parsley
2tsp lemon juice

Steps:

  • *In a pot, cook bacon over medium-high heat until golden & crispy, about 6 minutes. Using slotted spoon, transfer to paper towel-lined plate. * Leaving about 1tbsp of bacon fat in the pot,and heat over medium heat;cook potatoes, celery, onion, thyme, paprika, salt, pepper & bay leaf until onion is softened, about 6 minutes.Sprinkle with flour; cook, stirring, for 1 minute. Whisk in milk, clam juice & 11/2 cups water; bring to a boil. Stir in bacon;reduce heat, cover & simmer, stirring occasionally, until potato is tender, about 15 minutes. *Stir in scallops & parsley, simmer, covered, until scallops are opaque, 3 to 5 minutes. Discard bay leaf. Stir in lemon juice.
