1 tablespoon vegetable oil
1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped yellow bell pepper
1 clove garlic, minced
1 pound ground turkey
1 (14.5 ounce) can diced tomatoes
2 cups pumpkin puree
1 ½ tablespoons chili powder
½ teaspoon ground black pepper
1 dash salt
½ cup shredded Cheddar cheese
½ cup sour cream

Steps:

  • Heat the oil in a large skillet over medium heat, and saute the onion, green bell pepper, yellow bell pepper, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese and sour cream.

1 tablespoon olive oil
1 pound ground turkey
1 onion, chopped
1 (28 ounce) can diced tomatoes
2 cups cubed fresh pumpkin
1 (15 ounce) can chili beans
1 (15 ounce) can seasoned black beans
3 tablespoons brown sugar
1 tablespoon pumpkin pie spice
1 tablespoon chili powder

Steps:

  • Heat olive oil in a large soup pot over medium heat; brown turkey, stirring often, until crumbly and no longer, pink, about 10 minutes. Drain and discard any fat.
  • Transfer turkey to a slow cooker and stir in onions, diced tomatoes, pumpkin, chili beans, black beans, brown sugar, pumpkin pie spice, and chili powder. Set cooker to Low, cover, and cook until pumpkin is tender and has started to break apart, at least 3 hours.

1 pound ground turkey
1 medium sweet yellow pepper, chopped
1 medium onion, chopped
3 garlic cloves, minced
2 teaspoons olive oil
2 cups chicken broth
1 can (15 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) pumpkin
1 can (15 ounces) tomato sauce
4 medium tomatoes, chopped
2/3 cup chili sauce
3 tablespoons brown sugar
1 tablespoon dried oregano
1 tablespoon dried parsley flakes
1 teaspoon dried tarragon
3/4 teaspoon salt
3/4 teaspoon pepper
Dash crushed red pepper flakes
Dash cayenne pepper

Steps:

  • In a Dutch oven, cook the turkey, yellow pepper, onion and garlic in oil over medium heat until meat is no longer pink, breaking turkey into crumbles; drain. Stir in the remaining ingredients. navy beans, rinsed and drained (I added kidney beans and pigeon peas)

fat free sour cream, for topping (optional, or Greek yogurt!)

2 (15 oz cans) of white northern or navy beans, rinsed and drained
15 oz can pumpkin puree (not pumpkin pie filling)

Steps:

This chili recipe is rich, hearty, and super easy. This doesn't have the same flavor as a Tex-Mex chili but the basic flavors are there. While eating, you can't really put your finger on what's different. The cumin and chili powder are just right, not too spicy. A great meal to throw in the Crock Pot on a busy day and let it do all the work for you.

1 medium yellow onion, diced
1 - green bell pepper, chopped
2-3 clove(s) garlic, minnced
1 can(s) 100% pure pumpkin puree (15 oz.)

2 can(s) black beans, drained (14.5 oz. each)
2 can(s) fire-roasted diced tomatoes, undrained (14.5 oz. each)

Steps:

  • Brown the turkey in a large pan over medium-high heat.
  • Toss the turkey in the Crock Pot and add in the bell pepper, onion, and garlic.
  • Add in the tomatoes, beans, tomato sauce, pumpkin, and all of the spices.
  • Stir everything together.
  • Set to cook on high 6-8 hours or on low for 8-10. You can add a little chicken broth if it's too thick for your liking.
  • Add any usual chili toppings such as sour cream, cheese, green onions, etc. It would be good with cornbread. We served it with sharp cheddar cheese, sour cream, and Cheddar Corn Muffins (the recipe is posted for these as well).

Steps:

  • In a large skillet, sauté onions and bell peppers in olive oil until onions are translucent and fragrant, about 3-4 minutes. Add garlic and stir for about 30 seconds. Add in ground turkey and continue sautéing until turkey is browned. Drain excess oil, then transfer mixture to a large (4 quart or more) sauce pan. Stir in tomatoes, pumpkin, beans, corn and spices. •3/4 chopped green bell pepper
•3/4 chopped yellow bell pepper
•1 1/2 cans, 6 oz chopped green chiles
•1 1/2 large minced garlic clove
•1 1/2 lbs leftover chopped turkey
•1 1/2 cans, 10-11 oz diced tomatoes
•1 1/2 cans, 10-11 oz red kidney beans
•1 1/2 cups canned pumpkin
•2 1/4 tbsp chili powder
•3/4 tbsp cumin
•1 tsp sea salt
•1/2 tsp freshly ground black pepper
•Couple of shakes of cayenne pepper
•1/4 cup chopped fresh cilantro
•3/4 cup greek yogurt
•2 tsp of cinnamon

Steps:

  • First, heat the oil in a large skillet on medium-high heat. Next, saute the onion, peppers, green chiles, and garlic until tender (roughly 10 minutes). Make room on the pan and add leftover turkey (roughly 5 minutes). Stir in tomatoes, beans, and pumpkin. Season with chili powder, cumin, sea salt, and pepper. Lastly, put on low heat and let it simmer for 20 minutes. Mix in fresh cilantro and stir in with plain greek yogurt and cinnamon to serve. Voila, you're pumpkin turkey chili is ready for eight.
