1 teaspoon baking powder

¼ teaspoon salt
1 (15 ounce) can pumpkin puree
¼ cup canola oil
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9-inch square baking pan.
  • Sift flour, white sugar, brown sugar, baking powder, baking soda, cinnamon, cloves, ginger, nutmeg, and salt together in a bowl. Stir pumpkin, canola oil, and vanilla extract into flour mixture until a thick batter forms. Pour batter into prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 20 minutes.

4 teaspoons light corn syrup

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs, corn syrup and extract. In another bowl, whisk flour, pie spice, baking powder and salt; gradually beat into creamed mixture. Stir in baking chips and, if desired, pecans., Spread into a greased 8-in. square baking pan. If you have the full-size ones, you'll probably want more. Just sprinkle as much as you want over the top. If you don't have cinnamon chips at all, try butterscotch chips!

This is my favorite version, even though the caramel makes it sticky and messy it's totally worth it. It's forgiving, so feel free to alter and experiment! Store in an airtight container.

A friend a while back gave me this recipe after we had dinner at her house and she made this dessert. I had to have the recipe before we left for home. Oh my; what a great dessert. The only thing I changed in it was I added butterscotch chips. And Woody had me add a scoop of ice cream on top. We love it so much that I made it for Thanksgiving this year and it didn't last the weekend. It was so great with a scoop of vanilla ice cream on top. MMMMMMMMM!!!!! I called my friend and told her how I changed her recipe just a little and she is going to try it my way next time she makes it.

One 15-ounce can pure pumpkin
1/2 cup pure maple syrup
2 teaspoons pumpkin-pie spice
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups packed light-brown sugar
2 large eggs
2 teaspoons pure vanilla extract
One (8-ounce) package cream cheese, softened
1/4 cup confectioners' sugar
1/4 cup pure maple syrup
2 tablespoons fresh lemon juice
1/8 teaspoon salt
Orange and yellow food coloring (preferably gel paste) for decorating

  • Preheat oven to 350°F. Lightly butter a 9- by 13-inch baking pan, line with parchment paper, and butter again.

Divide the orange, yellow, and white icings among 3 piping bags or resealable plastic bags. Snip small holes in the corner of each. Pipe the icings on the blondies in stripes to resemble candy corn: a thin strip of yellow along the wide end, a thick strip of orange in the center, and a small white tip. Let stand until set.

From The Best 50 collection of cookbooks. This is straight out of the Brownies and Blondies edition. A little of this goes a LONG way! Not really a blondie by my standards, but it passes off as an interesting bar-type dessert. PLEASE NOTE: Because most people are not really used to tasting molasses, it may take a few bites to fall in love with this recipe. I did not like it at all when I first tried it. But, after giving it a second bite, I found I can't get enough of it. This seemed to happen with EVERYONE who tried it. So, please, before giving an unhappy review, try it again. If you find that the molasses is just too much to handle, try cutting the topping ingredients in half. It really does make a lot of topping as it is. I hope you enjoy this!

6 tablespoons vegetable oil
1/3 cup dark molasses
1/2 cup light brown sugar, packed
1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
2 teaspoons butter
1 tablespoon all-purpose flour
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 teaspoon ground ginger
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
6 tablespoons butter, melted and cooled
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
1 cup canned pumpkin, packed
3/4 cup milk chocolate chips (add about 1/2 tsp sugar if you use semi-sweet)

Steps:

  • Prepare crumb topping: In medium bowl, combine topping ingredients with fingers or pastry blender until well blended; continue until a soft dough forms. Cover and set aside.
  • Prepare baking pan: Heat oven to 350 degrees farenheit. Grease an 8-inch square baking pan with 2 tsp of butter. Dust with 1 Tbsp flour. Tap out excess flour.
  • Prepare blondies: With a fork, thoroughly mix together 1 1/4 cups flour, baking powder, salt, ground ginger, and sugars in medium bowl.
  • Stir in melted butter, egg, vanilla extract, and pumpkin until well blended and smooth.
  • Stir in chocolate chips just until blended.
  • Spread pumpkin batter evenly in pan.
  • Finishing: With your fingers, break off dime-sized pieces of molasses mixture. Sprinkle evenly over the top of the pumpkin batter.
  • Bake in center of oven for 25 to 35 minutes or until toothpick inserted in center comes out clean with a few moist crumbs (not wet batter).
  • Cool thoroughly in the pan on a wire rack for about 1 hour. Cut into 16 equal bars and remove from pan. Enjoy!

Soft pumpkin bars, cinnamon-sugary snickerdoodles, and buttery blondies rolled into one easy, no-mixer recipe. The bars are super soft, moist, and full of robust pumpkin flavor. The cinnamon-sugar topping lends an awesome texture contrast to the density the pumpkin creates. They're dense like blondies, rather than cakey or light. They're for those of us who relish a thick, fudgy texture. If you can resist, they taste better on the second day after the flavors have married. As a bonus, the bars get softer and moister on the second and third day, but I doubt they'll last that long.

1/2 cup unsalted butter (1 stick), melted 1 large egg 1 cup light brown sugar, packed 3/4 cup pumpkin puree (not pumpkin pie filling) 1 tablespoon vanilla extract 2 teaspoons pumpkin pie spice 1 1/4 cups all-purpose flour 3 tablespoons 

Steps:

  • Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
  • In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
  • Wait momentarily before adding the egg so you don't scramble it. Add the egg, brown sugar, pumpkin, vanilla, pumpkin pie spice, and whisk until smooth.
  • Add the flour and stir until just combined, don't overmix.
  • Turn batter out into prepared pan, smoothing the top lightly with a spatula; set aside.
  • In a small bowl, combine the granulated sugar, cinnamon, and stir.
  • Using a small spoon, evenly sprinkle cinnamon-sugar mixture over the prepared pan. Looks like a lot but it sinks down and soaks in while baking.
  • Bake for about 25 to 27 minutes, or until done. A toothpick inserted in the center should come out clean, or with a few moist crumbs, but no batter. The moisture content in pumpkin varies, as do climates and ovens; bake until yours are done. Allow bars to cool in pan for at least 30 minutes before slicing and serving. I find the bars taste better on the second and third day after the flavors have married. Bars continue to get softer and moister for about 3 days after baking, noting the cinnamon-sugar coating will melt (liquify) as time passes rather than stay granular due to the moisture from the bars. 3/4 teaspoon(s) salt
1 cup(s) butter, unsalted, room temperature
1 1/4 cup(s) sugar
1 large egg
2 teaspoon(s) vanilla extract
1 cup(s) canned pumpkin puree
1 package(s) (12 oz) butterscotch chips

Steps:

  • Preheat oven to 350.
  • Line bottom and sides of a 9x13 inch baking pan with foil, leaving an overhang on the sides.
  • In a medium bowl, whisk the first 4 ingredients together. Set aside.
  • With an electric mixer, cream butter and sugar on medium high speed until smooth, beat in egg and vanilla until combined.
  • Beat in pumpkin puree (don't worry if it looks curdley). Reduce speed to low and mix dry ingredients until just combined. Fold in butterscotch chips.
  • Spread batter evenly in prepared pan. Bake until edges begin to pull away from side of pan and a toothpick inserted in center comes out with just a few moist crumbs, attached, 35-40 minutes. Cool completely in pan.
  • Lift bars from pans (using the foil to help). Peel off foil, and use a serrated knife to cut into 24 squares.

1/2 tsp salt
1 cup unsalted butter, melted and cooled to room temperature
1 cup dark brown sugar
1/2 cup granulated sugar
1 egg
1 tbsp vanilla extract
1 (15-ounce) can pure pumpkin puree (about 2 cups)
1 cup each white & butterscotch chips
1 cup pecans, coarsely chopped

  • Preheat oven to 350 degrees F. Grease a 9x13-inch baking pan and line with parchment paper, with enough to hang over the sides; set aside. In a medium bowl, whisk together the flour, pumpkin pie spice and salt; set aside. In a large bowl, whisk together the melted butter and both sugars until completely smooth and no lumps remain. Add the egg and vanilla and whisk to incorporate, making sure the egg has been completely mixed in. Add the pumpkin and again whisk to fully incorporate. Fold the flour mixture into the batter using a rubber spatula. Add the butterscotch chips, white chocolate chips and pecans. Pour the batter into the prepared pan and smooth into an even layer. Bake until a thin knife inserted into the center comes out clean, 35 to 40 minutes. Set the pan on a wire rack to cool completely, then use the parchment handles to lift the bars out of the pan and cut into squares.
