This is appetizer/snack is very popular in Australia. It was introduced there by English settlers. I know you will be tempted to jazz these up with herbs or onion, well go right ahead! Sometimes simple is better, though. The original recipe calls for shortcrust pastry, but I use frozen puff pastry for ease.

7 ounces shortcrust pastry or 1 sheet puff pastry
8 ounces bulk sausage
flour, for dusting
milk, for glazing

Steps:

  • Preheat oven to 400 degrees F.
  • Roll pastry out into a thin rectangle; cut lengthwise into 2 long strips.
  • Divide sausage into 2 portions, dust with flour, and form long rolls about the same length as the pastry.
  • Place sausage in the middle of the pastry strips; brush pastry edges with milk, then seal long edge.
  • Brush the two pastries with milk, then slice into 1 to 2 inch rounds.
  • Place rounds on a baking sheet and bake for 15 minutes at 400 degrees F; reduce heat to 350 degrees F and bake until puffed and golden, about an additional 10 to 15 minutes.

Store-bought puff pastry simplifies the preparation of this easy sausage roll recipe. It looks impressive (and it is delicious), but so quick and simple. A salad is all you need to complete the meal. It freezes well, too.

1 (17.5 ounce) package frozen puff pastry, thawed
4 sausage links
1 large egg
1 tablespoon water

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Unroll puff pastry on a lightly floured work surface, and cut each sheet into 4 pieces. Place 1 sausage into the center of 4 of the pieces of pastry. Lay the remaining 4 pastry pieces over the sausage and press the edges of the pastry together to seal tightly. Slash the top of each pastry several times with a sharp knife.
  • Whisk egg and water together in a small bowl, and brush egg wash over the pastries with a pastry brush. Place on the prepared baking sheet.
  • Bake in the preheated oven until deeply golden and puffed, about 20 minutes.

My Mom discovered this sausage roll recipe years ago and it has been passed around many, many times. A sausage mixture is baked into a puff pastry roll and served as little appetizer bites.

1 pound ground pork sausage
1 onion, finely chopped
2 stalks celery, finely chopped
1 tablespoon chopped fresh parsley
ground black pepper to taste
½ (17.5 ounce) package frozen puff pastry, thawed

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a medium bowl, mix together ground pork sausage, onion, celery, parsley and pepper.
  • Roll one pastry sheet into an 8x12 inch rectangle. Spread with 1/2 the sausage mixture. Beginning with one of the shorter sides, roll pastry. Moisten with water. Seal the edges with a moist fork. Slice the roll into approximately 1 inch pieces. Repeat with second pastry sheet and remaining sausage mixture.
  • Flatten the roll pieces onto a large baking sheet. Bake approximately 20 minutes, flipping after 10 minutes, until sausage is evenly browned and pastry is golden brown. Drain on paper towels and serve warm.

2 tablespoons butter
2 onions, sliced
8 ounces breakfast sausage
1 sheet frozen puff pastry (from a 17.3-ounce package, such as Pepperidge Farm), thawed
1/2 cup grated Parmesan (not shredded; grated to a powder)
1 large egg

Steps:

  • Put the butter and onions in a skillet over medium heat and brown the onions until dark, 40 to 45 minutes. Remove from the skillet and set aside. Add the sausage to the same skillet and crumble; cook until done, 5 to 8 minutes.
  • Roll the pastry out to 10 by 12 inches. Sprinkle the cheese over the pastry, then the sausage, then the onions. Roll both sides toward the center of the rectangle until they touch. Chill in the fridge for 20 minutes or place in the freezer for 10 minutes.
  • Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment.
  • Slice the pastry into 1/3-inch slices and transfer them to the prepared baking sheets. Mix together the egg and 1 tablespoon water in a small bowl and brush the mixture over the top of the slices. Bake until golden brown, about 20 minutes.

I make these as weekend snacks and for parties, I strongly suggest to double the recipe if you are making these for a party. To save some time prepare the sausage mixture up to 24 hours in advance. These are simply delicious, and not hard to make!

1/4 cup fresh breadcrumb
2 tablespoons milk
1/2 lb Italian sausage, casings removed
1/2 onion, finely chopped
1 egg
1 -2 teaspoon fresh minced garlic
1 teaspoon dried oregano
1 sheet frozen puff pastry, thawed
1 egg, lightly beaten (to brush on pastry)
marinara sauce, heated

Steps:

  • Grease a large baking sheet.
  • In a small bowl combine breadcrumbs and milk; let stand until the milk is absorbed (about 5 minutes).
  • Transfer to a processor, and add in sausage meat, onion 1 egg, garlic and oregano; using on/off turns, process until blended.
  • Season with salt and pepper.
  • Unfold the pastry sheet onto a floured surface.
  • Roll out into a 20x10-inch rectangle.
  • Cut pastry crosswise into 10x4-inch strips (I use a pizza cutter for this!).
  • Brush each strip with beaten egg.
  • Spoon 1/3 of the sausage mixture in narrow strip lengthwise down the center of each pastry strip.
  • Fold the long sides in covering the filling and overlapping slightly.
  • Transfer and arrange the rolls seam-side down on the prepared baking sheet.
  • Cover and chill until rolls are set (at least 1 hour).
  • Set oven to 425°F.
  • Cut each roll crosswise into 8 pieces.
  • Separate pieces on the baking sheet.
  • Brush with remaining beaten egg.
  • Bake until rolls are puffed and golden (about 20-22 minutes).
  • Serve warm with heated marinara sauce.
  • Delicious!
