BAKED COD WRAPPED IN PROSCIUTTO WITH CHERRY TOMATOES



Baked Cod Wrapped in Prosciutto with Cherry Tomatoes image

Flaky and juicy baked cod wrapped in prosciutto and roasted together with juicy cherry tomatoes on the vine.

2 lb cod filet ((2 to 2 1/2 lb filet))
6 oz prosciutto
16 oz cherry tomatoes (or grape tomatoes)
4 Tbsp extra virgin olive oil
salt (or to taste)
black pepper (or to taste)

Steps:

  • Preheat oven to 425˚F. Pat dry the cod fillets with paper towels and remove any stray bones.
  • Place filet onto a rimmed baking sheet and fold the thin sides onto the filet to create a uniformly thick filet. Season all sides with salt and pepper and drizzle each side with 1 Tbsp of olive oil.
  • Place strips of prosciutto over the filet overlapping the slices as you go to avoid any gaps in prosciutto. Tuck the layers underneath the filet. The ends do not need to be fully covered.
  • Place tomatoes in a bowl, season lightly with salt and pepper, and drizzle with 1 Tbsp olive oil. Toss to combine.
  • Add seasoned tomatoes to the baking sheet around the fish and bake at 425˚F for 35 minutes or until the center of the fish reaches 145F on an instant-read thermometer. The fish should be flaky in the thickest part of the filet. Cool for 5 minutes then slice into portions with a serrated knife and spoon pan juices over the slices to serve.

4 pieces skinless tilapia fillet (2 lb total)
8 thin slices prosciutto (not paper-thin; 6 oz total)
12 fresh sage leaves, stems discarded
4 teaspoons olive oil

Steps:

  • Cut fillets lengthwise to separate smaller and larger portions, then pat dry and season with pepper. Wrap each piece of fillet crosswise in a slice of prosciutto, leaving ends of fillet exposed if necessary and tucking 1 or 2 sage leaves between prosciutto and fillet (use 1 leaf for smaller pieces of fish).
  • Heat 2 teaspoons oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then sauté the 4 larger pieces of fish 4 minutes. Turn over and sauté until just cooked through, about 3 minutes more. Transfer to a platter and keep warm, loosely covered with foil. Wipe skillet clean and heat remaining 2 teaspoons oil, then sauté the 4 smaller pieces of fish, turning over once, until just cooked through, about 4 minutes total.

Pistachio-Crusted Tilapia with Chard, Flash-Fried Prosciutto, Gorgonzola and Pine Nuts image

1 cup shelled pistachios
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon garlic powder
4 tilapia fillets
Salt and freshly ground black pepper
3 tablespoons honey mustard
1 1/2 tablespoons olive oil, divided
4 ounces prosciutto, diced
4 tablespoons pine nuts
6 cups fresh chard leaves
1/4 cup crumbled Gorgonzola or blue cheese

Steps:

  • In a food processor, combine pistachios, oregano, thyme, and garlic powder. Process until finely chopped and transfer to a shallow dish. Season both sides of tilapia fillets with salt and pepper. Brush honey mustard over both sides of tilapia and then transfer to pistachio mixture. Press mixture into both sides of fish.
  • Heat 1 tablespoon of the oil in a large skillet over medium heat. Add tilapia and cook 2 to 3 minutes per side, until fork-tender.
  • Heat remaining oil in a small skillet over high heat. Add prosciutto and cook 2 minutes, until golden brown. Add pine nuts and cook 1 minute, until nuts are golden brown. Add chard leaves, cover and steam 2 minutes, until leaves soften. Arrange chard mixture on a serving platter and top with Gorgonzola and serve with tilapia.

olive oil flavored cooking spray
8 slices prosciutto
4 (4 -5 ounce) tilapia fillets (about 4 to 5 ounces each)
salt & freshly ground black pepper, to taste
2 tablespoons olive oil
2 roasted peppers (roasted red peppers from a jar, drained, patted dry and finely diced)

Steps:

  • Preheat oven to 400°F Lightly coat a rimmed baking sheet with cooking spray.
  • Arrange four slices of prosciutto evenly spaced on the baking sheet. Place a second slice over each of the first four. Set one tilapia fillet over pair of prosciutto slices.
  • Season the fish with salt and pepper, then drizzle each with about 1/2 tablespoon olive oil.
  • Spoon a quarter of the diced red pepper over each fillet and spread it evenly.
  • Starting at one end of each fillet, carefully roll it up, holding the prosciutto so that it wraps around the outside of the fish. Poke a toothpick through the center of each roll to help it hold together.
  • Bake 20 to 25 minutes, or until the flesh feels firm and flakes easily.

2 teaspoons butter
¼ teaspoon Old Bay Seasoning TM, or to taste
½ teaspoon garlic salt, or to taste
1 lemon, sliced
1 (16 ounce) package frozen cauliflower with broccoli and red pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees F). Grease a 9x13 inch baking dish.
  • Place the tilapia fillets in the bottom of the baking dish and dot with butter. Season with Old Bay seasoning and garlic salt. Top each one with a slice or two of lemon. Arrange the frozen mixed vegetables around the fish, and season lightly with salt and pepper.
